Homemade Fish stock | for sauces and seafood soups

  • Fish stock forms the basis for seafood sauces, soups, seafood meals and more. This is a basic version with the addition of optional white wine. Make a big batch, then freeze it, ready to use. If you're using flat style fish like sole, flounder etc then only cook it for 20 minutes otherwise you may get bitterness out of the bones. It's also professionally know as Fish Fumet, or Fumet de poisson. Ask your fish monger for the freshest heads and bones you can get. If you're a regular customer, chances they won't even charge you. Never buy stock again.

    Very important to remove the gills from the fish heads otherwise the stock will be bitter .Also rinse the fish is in cold running water for a few minutes to remove all traces of blood ,then drain before adding to the pot .

      Not only that, gills are also collectors of heavy metals, industrial wastes and other toxins as they constantly pass in and out particles, liquid and gas from water. They MUST be removed from marine animals in food preparation.

    I agree with you lot, I don’t need all the talking, I know what I’m doing in the kitchen. The quick images across the screen are more easily absorbed in my head. Very relaxing, not annoying.

    I would add celery, Dill bulb and maybe even carrots. In Louisiana we use the “Holy Trinity” onions, celery and bel peppers.

    I just made it, used a salmon head and Sea Bass spine. My personal tweaks include : Old Bay added with thyme, Celery stalk & leaves with parsley stems. Thank you, fish chowder with Haddock is next.

    The show One Piece made me search this. It´s the episode where Sanji teaches a lesson to Marines Cooks about not wasting anything from potato peels to fish leftovers. He even did fish-balls from grinding the fish leftovers as well as stock.

    Use little olive oil or veg oil instead of butter. Add garlic or ginger. Fry the fish a while or to little brown. Add celery on top of onion. Then you may have a surprise.

    Just a tip as a culinary student, next time remove the eyes before adding the heads in the stock. These eyes can cause a "funky" taste at times. But overall a great video!

      Thanks for the tip Gabrielle, yes eyes can be bitter if they burst, but I've never found them to be an issue. They are a delicacy in parts of Asia.

    I live in Minnesota about as far from fresh ocean fish as you can get, what about using fresh water fish for the stock? Your channel is excellent, love all the great recipes, keep up the great work

      Sure, why not. I've used fresh water trout before and that made a nice stock. Also any crustaceans bits but fry them in oil first.

    You have to clean and rinse the bones from all blood first. If not the stock get brown.

    Remove the gills first, and make sure you don't use an oily fish as it taints the flavor of the stock. I'd also suggest simmering the fish heads and onions together for 10 mins instead of 5, but the difference will be minimal.

    I cook/simmer mine overnight. I don't think 89 minutes cooking will give you the real fish stock flavor. I sometimes add shrimp shells to it too.

    I just discovered fish bone broth and I have 2 questions:
    1. is it OK to use salmon to make the broth? Because some people says don't use oily fish.
    2. Some people Cooks the fish broth for 4 hours some say it's better for no longer 1 hour. Which one is best?

      Depends on the fish, some flat fish 20 minutes is maximum as bitterness leaks out of bones. Other fish are fine for longer.

    I have a question. Would it be better to use dried/cured fish against bones and head? I think cured fish has more umami (taste) than fresh bones and head? Please answer for me.

    I’ve never been a fan of adding any fat to the pan when I’m making stock. It always ends up floating to the top of the stock giving it an unpleasant look. Plus most of it gets skimmed off anyway.

      Yes once you cool it, you can easily remove it. It does help with the flavour.

    I like to reduce my chicken stock really thick to freeze, then reconstitute at cooking time. Is fish stock too delicate for this treatment?

      You can add carrot, celery etc but then it starts to become a soup, not a basic stock.

    Very nice Joel, question, if i make a big pot and freeze in individual containers, appx. Shelf life in the freezer ? Also, you may not like it, but i hate to put those fish cheeks and eyes in the stock, i eat them, lol, but i know they are flavor.

      I use ziplock bags 1 cup at a time, they take no room sitting up right in freezer. Fish eyes, really?

      @@recipe30 yes , the fat behind the eyes is delicious, in the ocular socket , especially on tuna. I promise, i know it is weird, but i get the same reaction from people when i eat the cheek meat and meat from collar. Have a good day my friend

    i have a question, do you guys always keep fish or beef stock/broth in fridge, or do you make one everytime the recipe you want to make require it? how long does it stay in the fridge ? here in my culture, or in my family, we always buy and use cube fish stock or chicken stock... so I'm unfamiliar with water fish/beef stock and the way people keep it...

      I usually make a big pot full, reduce it, then freeze it in one cup portions. Zip lock bags are good for that, although I am trying hard to remove plastics from my kitchen.

      Usually alcohol evaporates when heated at certain degree. Only the fruity flavor remains.

      Thanks Padmini, stocks don't last that long, 3 days max, but you can freeze it in zip lock bags or containers, one cup at a time so it's always ready to use :)

    You did not clean your carcasess properly. You can see the dark blood under the spine. This is exactly what makes fish taste fishy. Use a brush and scrub it clean first. Scrub inside the head well too.
