This week I had my local butcher cut some “Extra-Thick” pork steaks from a fresh Boston Butt. Also known as blade steaks - or pork shoulder blade steaks - Pork Steaks are excellent on the grill and these thick-cut versions are hearty enough for the biggest appetite!
I start out by seasoning each side of the pork steaks with a little Killer Hogs The AP Seasoning followed by a generous layer of Killer Hogs The BBQ Rub. Just let them hang out on the counter while you get the grill going.
I’m firing up the PK 360 for this cook, but you can use any grill set up the same way. Start with a chimney full of hot charcoal and spread the coals out evenly across the front and back of the grill; add about a chimney of unlit coals down the center. This way the grill will have even heat throughout the whole cook.
You can also add a couple chunks of your favorite wood to the hot coals for some smoke flavor. I use cherry but hickory, pecan, or apple are good choices.
To slow the grilling process down, I use a raised cooking grate. This creates a little distance from the hot coals and allows the steaks longer time in the smoke.
Place the pork steaks on the raised grate and cook them for about 20 minutes then flip and repeat. By this time the outside should start to turn a little dark. Remove them from the grill and wrap.
I use a sheet of aluminum foil with 2 Tablespoons of butter and a good drizzle of honey over the top. Close the foil up tight and get them back on the grill.
This step tenderizes the pork steaks and keeps them from getting too dark. Use a good probe thermometer and monitor the internal temperature. It should be 190-195⁰.
Once temp is reached remove the steaks from the grill (careful because they’re hot) and sit the raised grate to the side. Place a set of grill grates over the hot coals and give it time to get hot.
Carefully unwrap each pork steak and brush the outside with a good sauce. I’m using my new Killer Hogs Vinegar Sauce. Place each pork steak on the grill grates and cook each side about 4 minutes to get a good char on the outside.
They’re done at this point and after a short 5 minute rest, ready to serve. You can really taste the grill flavor and the vinegar sauce goes nice with the richness of the pork.

I'm not sure if anyone else agrees but in my opinion Malcolm is definitely one of the best youtubers I've ever come
across!
HaydsZ totally agree!
He knows his BBQ. Memphis BBQ is the best.
Plus, I would never trust a skinny Pitmaster.
HaydsZ hands down he's the best!!-
HaydsZ I agree,my new fav
If I'm in need of cooking tips..and if the size of the man doesn't take over 80 percent of the screen, IM NOT INTERESTED!
Love this man's passion and style and demeanor
Malcolm, thank you! I made these for my husband and son a few years ago and they were so good. My husband wouldn't admit that I had outdone his best grilling, but there wasn't anything left on his plate but the bone that he'd picked clean. I'm making these again today for my men. I followed one of your videos last week for smoked baby backs. Once again, my husband wouldn't admit that it was good. I think his smoker has a new master. 😉
🤣🤣🤣😇
lol
I bought this as my first propane grill. It's been a fun, learning experience ruclips.net/user/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I think it's a bit too pricey after looking at other grills, but it wasn't hard to put together and it works really well. I love the side burner option for heating food during a power outage. I have an electric stove and live in the South (Hurricane season), so this was a bonus. I also bought a cover for it and it has protected it nicely (the Char Broil All-Season Grill Cover 3-4 Burner: Large). Every few grill sessions, I take the rack (or grate) and burner covers off and clean them with a non-abrasive scrubby and mild soap. I wipe the excess off of the bottom as well, taking care to avoid the gas and pilot lines.
Looks like the tastiest pork steaks I have ever seen. This dude knows how to BBQ👌🏻 thanks for the vids.
Thanks. Ive never made these. I thought they were pork chops. Lol
Malcom you have the best BBQ RUclips channel by far! The other guys don’t compare. I love the way you sum up what you have done at the end. You will make a good living on RUclips! Keep up the great work.
I have learned a LOT from watching your vids. They are easy to follow and you have a talent to connect with the viewer. I have followed several of your instructions on various types/cuts of meat and they have turned out great. Can't wait to try these grilled pork steaks. I was raised on a hog farm (Durocs) and can remember how good the dinners were. I am 68 yrs old now and I am enjoying it all over again. Thanks and keep up the good work.
if you have never used killer hogs seasoning you need too it really does take your cooks to another level. the best I've used to date
Made these tonight and they were sooooooo good, awesome as you said Malcom. I didn't have the exact same ingredients so used my own BBQ rub and instead of honey used brown sugar and the butter. Cooked them on my weber kettle with offset heat. Did use the Royal Oak Chef select, had that and used pecan and Apple wood. Thanks so much Malcom. This is THE way to cook blade steaks!
How to bbq right + cooking with a PK = amazing bbq! They look wonderful!
Malcom man you are the king of you tube barbeque.
I don't even know how good it is. But the sincerity and love from you sales it
Ben a fan of this guy for a while, but when i saw this recipe and that new vineger sauce, i placed my order for it immediately. I ordered the rub and AP seasoning too. Im gonna cook this as soon as my order comes in. Thanks Malcomb!
Wow! Just found this today, my hubbie got some pork steaks and I had no idea what to do with them. I know how to do a whole butt, but this is next level. Can’t wait to try this.
Undoubtedly the best looking pork steaks I've ever seen. Even raw. I love that you did this like competition ribs. This is phenomenal

Love Pork Steaks. Very popular in my city of St. Louis
......"Don't baste your BBQ - Maul it ! " Some of my family hated Maul's BBQ sauce - but I always loved it !
By the time I was 12 years old , my dad had taught me how to do pork steaks on the grill on the back porch .
We were just across the river in Madison County , Illinois ...... everyone loved pork steaks !
Love your channel! Couple questions:. 1. Grill good and hot. What temp you looking at? 2. Regular butter. Salted or not? Thanks bro and thanks for keeping me fed!
When I get props on good q I always shout out where I learned. I’m just a parrot repeating Malcom’s wisdom. To my “main man Malcolm “ thanks.
We love pork steaks and this way to cook them sounds amazing!! Thanks for this video!!
Tried this out first time last week on my Legacy Char-Griller with coal bed lowered completely down using exact recipe. They turned out delicious. I asked for 1.25"cuts, however the grocery butcher didn't cut the steaks as thick as those shown in the video. I probably used too much charcoal too as they cooked fast. Thankfully my lady loves bark! Trying again now with a twist. Smoking and wrsppingon my WSM and searing lastly on thegrill with grill grates heated up
Well done, brother, and good video. This is more or less how I already do pork steaks here in Ohio. I've never wrapped them though, but I've recently started wrapping most everything I BBQ, so I'll give it a try, probably with butcher paper instead of foil. A lot of people cook these quick over direct heat like a good beef steak, but slowing down and barbecuing them is the way to go.
Sounds good, I've always stared them off the coals on the side, then put them in an aluminum pans with doctored -up BBQ sauce for an hour or so and at the end, take them out and put them over the hot coals to make the sauce tacky.
I absolutely love pork steaks. Made some for my daughter and I just the other day. Love ya Malcom
I've met Malcom at his school in Memphis and he is without a doubt a genuine human being his wife Rachelle as well.

NICE! Could almost taste them.
Southaven MIssissippi right here! I knew I like you for some reason.

WOW 🤩
That's money right there.
Looks amazing good Job!!!!
going to do pork steaks and always use your channel as a go to for recipes, i have ironwood 885 what would be a good temp to put it on for basically same cook you done here
Do you actually find that those grill grates do a better job searing than the actual ambient nuclear heat of a well lit set of charcoal?
Do you ever get to the end and think "I've got to do x differently"? Enjoy the vids!
What temperature are you at for the smoking and wrapped phases?
I can actually smell and taste this video.
I haven't had one of these in years and I can't figure out why my wife stopped buying them. We preferred these over steak.
You mentioned South Haven is at Michigan??
@3:27 I said, That's My Man!
Ha Ha That's live action right there. :)
Exquisite
What temperature are you cooking these at?
