- Thank you for stopping by to watch one of my Pork Steak Recipes. Pork steak is making comeback in Texas and very popular at many BBQ joints. This pork steak recipe came our really good and when I added a little BBQ sauce, the flavor was taken to a whole new level. The salt and pepper pork steak was really good but the pork steak with the LC BBQ Certified rub was packed with flavor.

St. Louis resident here. Can confirm, these are a bbq staple in town. I love them.
Every grocery store in STL carries these. Typically only 1/2” to 1” thick with the bone. You cut these like monsters!

180-190 is the perfect texture. Anything higher and it shreds like pulled pork. A fella at the Double Nickel in Haiti, Missouri makes hands down the best-smoked porksteak I've ever had. I'm born and raised in missouri but am a trucker and have had bbq everywhere. 180 to 190 man, you won't be disappointed.

Whrn you are using a brush to baste your meat its called brushing, IF you were using a "mop" them you would be moping on your steaks. They do look FANTADTIC! I make pork steaks very often!

This looks incredible. We are gonna try these this week, because Beef is becoming so expensive. So, I want other ways to try and cook new things. Thank you for sharing these recipes and ideas, because the days of $ 1.99/pound brisket or sales of 99-cent/pound brisket might be gone. Best has been around last holiday. And, we can't afford $ 5.49 for the higher grade brisket prices. That's why we are learning from RUclipsrs (like you and others). Because, for us, prices are skyrocketing to eat out in early 2024, and it's not possible to spend $20/25 per person eating out. So, we are going to master how to cook things at home and cut all the Middle-Men and do it ourselves, saving that precious money.
Those were amazing looking pork steaks. They looked incredibly tender and juicy. I absolutely loved the smoke penetration/flavor you get throughout the whole steak, which is extremely difficult to accomplished with a whole shoulder. Well done 👍🏾 my friend. Thanks for sharing.

I have never had such a big cut of pork in my life. In Japanese cuisines pork is usually sliced very thin or small blocks being stewed. I am very curious about this dish my friend. Also well done on growing the channel so big! Keep it up!

I live in Mississippi and these are popular on the grill, I cook them all of the time.
Grilled pork steaks have been huge in St. Louis since the 1950s, but you can't usually find them on the shelf elsewhere. Done right, with a good dry rub they can be almost like a beef steak. Except MUCH cheaper than beef or pork chops. I don't have a smoker, so haven't tried them smoked yet, but we grill them once a week. They only take 10 minutes to grill, like a t-bone. Outside of St. Louis, you'll have trouble finding them. Just ask your butcher to take a pork shoulder and slice it into steaks of an inch or thicker. They use a saw to cut through the bone. I like to leave the bone in when grilling as I think it adds flavor. I use a mesquite dry rub on mine. I'll have to try smoking them some time. Nice job.

Love the video. I loved everything you did, but then you said Blues Hog Bbq sauce! I live nearby and I've used so many bbq sauces over the years.... Blues Hog everything!! It's been my number for several years now. Sweet baby rays is a perfect starter with adding a few things... but Blues Hog is my main boss sauce and rub/seasoning!
My God Joe those looked fantastic..! I love smoking pork steaks. I've never cut them off the shoulder though.. I need to try this out asap. I take mine to 180 as well.. 145 doesn't render the fat as well. Thanks for the awesome video..!

Great job... If that was your 1st time REALLY GREAT JOB....BBQ Pork Steaks are big in St. Louis and it just floated down river till it got to West KY. In some towns in the area Pork Steaks are bigger than Pulled Pork. IMOP you cut them just right. I do these quite often as my family really loves them. I will do just like you and I will take them all the way to 190. Again IMOP Basting is the key or they get a little dry at the edges... Dang good job there Joe.

Me as a person that’s wanting to open up a smoked meats truck, and someone who’s also lazy, I’d like to see if there’s a way to smoke the shoulder as a roast, then just the steaks afterwards like a prime rib roast.

Smokin' Joe's Pit BBQ I have not been there yet. But I have used Tootsies mop on ribs and pork steaks. I did the pork steak exactly like you did with her mop. Excellent. The mop on the ribs made them seem almost like beef ribs. You should try it sometime. Keep up the good work. Thanks for the content.
I have to butcher cut them into about 1/2" thick steaks so I can toss a couple of them on the pit early in the morning then eat it with eggs for breakfast.

Hey Joe - just found your channel. Love your presentation style and love your cooking style. Quick question on the pork steaks - what flavor of pellets did you use?
This is my offset smoker so I used splits of oak. I normally use Mesquite or Hickory on my pellet smoker. Thanks for watching.👍

Hello Christopher. You can do 225 for 4 hours then an extra hour at 275 to 300 until you hit 195 or so.🤘

Hey great video!! So I was wondering why pork chops are different internals than pork butts?
Hello Heather, pork chops are very lean and usually come from the loin. The reason these type of chops/steaks are not as popular is because of the fat content. In order to break the fat down, you need to smoke it or cook for a longer period it so it gets tender and so the fat renders down. Thanks for watching.👍

Shouldn't you allow the pork to sit around with the salty spice rub on it for 8-12 or 20hr? The salt should make it more tender and flavorful.
I once heard from another RUclipsr that salt will draw the moisture out of meat if you set it for a long time. Not sure if it’s true or not but it does make sense. Salt it used to draw out moisture. I don’t remember who said it but he said to not let it sit for longer than 2 or 3 hours.
@@dustinworkman4272 Yes that's true, but the sodium/chloride ions can also prevent the proteins in the muscle fibers from denaturing really hard--as they do when you really cook/overcook something. Bon Appétit did some testing with turkey meat, and the dry rub was good: good moisture inside, and a crispy outer layer.
Quinton Wilson I have tried it both ways and I really couldn’t tell a difference between the taste/flavor or the moisture/tenderness of the meat. I guess you would have to try them both and taste them both at the same time to compare.
