I noticed you got a candy thermometer that's great I bought one too so it makes it so much easier to know how when it gets up to 300°. I'm going to give this one to try
Hi Sarah! Since trying your recipe 3 wks ago, when my toffee separated twice in one day, I started using my hand-held IMMERSION BLENDER as soon as butter & Allulose dissolve, BLENDING VERY WELL, (1-3 minutes) BEFORE BOILING BEGINS! I don't stir until it's time to mix the vanilla in the toffee. Also, I've found cooking to 270° was firmer & still perfectly chewy. (I think the IMMERSION BLENDER forces the fats to emulsify); and it has STOPPED my caramel from separating, on every batch since! I hope this helps you & your viewers as it has me.
So happy to use the Allulose I bought for another recipe and I love me some toffee. Plus having some dental issues, the soft would be perfect!! BTW, I love that necklace! You always seem to have unusual and exotic looking jewelry....I love to cook but jewelry is my 1st passion!

No way I can tolerate that much sweetener these days. 😢 After going squeaky clean keto for a while, discovered my body is against all sweeteners. Very sad! So like swiss meringue & this caramel... can they be less percent of sweetener?? Anyone know?? Thank You for all Your hard work & devotion to our lifestyle!! More Blessings upon You all in 2023!!

Hi Annabella, in the recipe card, I usually will say 1 teaspoon of each extract… But to be honest, I always do it to my personal taste, and that is what I always recommend.

Even if you nail the temperature of the caramel and immediately take it off the burner, the caramel will continue to cook-and can still burn. The key is to quickly stir in the liquid ingredient(s) or butter, which will rapidly absorb some of the heat and slow the cooking process. But you did all those things🤔 Candy making is very temperamental. I’m sorry that your batch didn’t work out.
Well darn it. Got my candy thermometer today and was doing so well making this until the caramel didnt love me as much as it loved CJ. Separated and was not thick and creamy😑

Lots of stirring. Sometimes a bit of water, or a touch more cream can help while stirring ☺️

Does Monk fruit work? Mine came out like crunchy powder?
You have to use Allulose for chewy toffee. Erythritol and monk fruit make crunchy toffee.

My caramel burnt:( i stirred a ton left it lower than medium heat. It never even got to 210 according to my thermometer. Any suggestions?
