    My grandmother was from texas but moved to missouri where my mother was born. Their noodles were just flour, egg and salt. Dough was rolled out thin and air dried for several hours. Then you flour good, rollup and slice with a sharp knife. They would roast a chicken or a beef roast adding extra wayer to have a rich broth. After meat is cooked and cooling, pour broth into a saucepan and bring to a boil. Drop in noodles, strirring so they dont stick together. Ccok 20 min. Salt and pepper to taste. Serve over mashed potatoes. Beef noodles, i think, have more flavor than chicken but both are excellent!!!!
    To me, dumplings are fluffy bread dropped in chicken and broth...

    Those rustic noodles look just like my mom’s dumplings she made for chicken and dumplings…one of my favorite meals.

    I grew up in a German/Irish house. My great grandma and grandma always made noodles like this. It was 1,1,1...One cup flour, one tsp salt, one egg and enough milk or water to make it come together. They are SO good with homemade chicken and noodles :)

    Pam and Jim, I want to say how much I love RRH, I have learned SO many things from you that I find invaluable. Today I just started watching the TG’s videos, and I am so excited to see the videos about food on the road!!!! My husband and I are also good at road trips, and these ideas about the car oven, pre-packed meals, etc. are just so encouraging to me. Thank you!! Then the other comment I wanted to make-I wonder if snipping the dough into a pie plate of flour, followed by tossing around and then sting off the excess with a spider or strainer would be a tidy approach? Keep the videos coming!

    Brings me back to the days when my Mom did her noodles in 60's. Remember them in long strips on the kitchen table drying out.

    Homemade is the way to go. I was raised Irish and my mom taught us girls the good meals you can make with homemade noodles. I married in an Italian family. They know noodles too! Thanks Rose for this video.

    I grew up on chicken pot pie. Gran would cook it in the morning and put it in the fridge for the day. To prevent the noodles turning into 'mush' she added a handful of finely ground cornmeal to the flour. The noodles remained tender with a slight toothiness. Loved those one pot meals.

    There was a dear lady that used to care for us on occasion that would make noodles. I was always amazed that she would roll them out on the big kitchen table and cut them….. she was an amazing cook!!

    When making Kluski noodles with my kitchen aid I let noodles drop into a bowl with a little semolina flour in it and toss them occasionally as I cut them. Letting your little scissor cut noodles drop into a bowl with a bit of semolina flour and tossing every few cuts would them separate. Not sure why semolina flour works better for this than regular flour. Probably because it is a little bit coarser. Regular flour would work too.

    I love this! You make it so quick & easy! I’m sure you know from your breadmaking that if you allow the dough to rest before rolling it out, the gluten will relax & not spring back so much. One thing I love about making pasta is you can use any flour you have - and it doesn’t even have to be a gluten flour. One of my favorite flavors is lemon pasta. I add some zest & juice to the pasta, then make up a lemon-parsley sauce…delicious! Your powders would be fantastic! I’ve always steamed fresh spinach, squeezed out the water & put the spinach in the food processor when making the pasta.

    I make noodles a lot.. get the girls together and we have a ball.. even got a couple brothers together and made batches for them ..
    I do noodles with chicken, or beef, or venison.. sometimes just broth, sometimes cook them in a stew..
    I also make speatzle.. that is really fun and they freeze beautifully..
    My recipe is 5 eggs, tsp of salt and 3 and 1/3 cup flour..
    I make up the dough using my food processor.. then use my noodle maker on my kitchen aid.. my arms limit me.. but we get it done..

    chef Jean-pierre shows you how to make Italian(egg) pasta. that's the only way I make egg noodles.

    Pam, have you tried separating the eggs and beating the whites before mixing in the yolks and milk? I almost always beat egg whites for all recipes that use eggs. It makes pancakes super fluffy, and cakes are really great with beaten egg whites. I make egg white bread with beaten egg whites and no flour.

    Pam, you’ve made this so much easier to do! I usually put off making noodles til I have time, space and energy to pull out all the equipment - roller, cutter, drying rack - so it becomes a Big Deal. Not any more! Using the kitchen shears is another great idea, think I’ll do that tonight. 😊 I’ll add spinach powder (and a bit of water) to the recipe. Tomato sauce for him, pesto for me, and dinner is done. Thanks! 🙏

      Laura, I am the same way. I felt like I had to make a huge batch to make it worthwhile getting out my Atlas & food processor. It’s fun and the results are delicious, tho!

    Oh thanks so much ! I will be doing this for grandkids! Sure they will love it! I do freezer meals for them so that mom doesn’t have time to cook they can just set out things from freezer. One funny thing one of my grandsons said to me when I made freezer burritos for them last time. I had put in mozzarella cheese because that’s all I had. He said I love them grandma but next time can you use ORANGE cheese! lol so he means cheddar !

      Sorry! LOL. I still use my Atlas some of the time, but it is easy to whip up a batch of fresh noodles this way without having to clean the Atlas afterward!

    Would it be possible for you to freeze dry your noodles? It would be great for you to do a video on quick dry freeze noodles.     I add all ingredients to my food processor, use the metal blade and it makes the dough, easy peasy, no mess, no kneading. Rest the dough, then get out the Atlas pasta maker. It rolls the dough to my desired thickness, and cuts it in perfect strips. I have several cutter variations, from thin to wide. No messy counters or bowls to contend with. Then I dry the noodles on a huge pastry board with lots of flour. Cook in chicken broth or beef broth for heavenly flavor or freeze ten raw on a baking sheet for use at a later date. I like using them in my homemade and canned beef and veg soup (no potatoes) or old fashioned chicken and noodles. I think I will do this before the weather gets warm again, making a huge batch of noodles for the freezer. It’s a super easy meal when we are tired and hungry.

    4 Ingredients
    2 eggs
    1/2 t salt
    2T. milk
    Whisk together.
    Add 1 c flour

    Hi Pam. Have you done noodles in the freeze dryer? Too fragile? Did you cook the noodles before dehydrating or freeze drying? I'll go back and watch again but would they rehydrate faster after cooking do you think? Gah, I sound so needy. I have been using Mr. Noodles and freeze dried veg from my garden to make up 500ml mason jar soups and though they do turn out ok, Im thinking healthier would be adding carrot/spinach/squash powders to the noodle mix...

      I’ve cooked and then freeze dried noodles, prepping for any time we might be camping and short of water. They rehydrate beautifully in hot water or hot broth, as in making soup. Adding vegetable powder to the recipe works well - my favorite is spinach. I also like pumpkin, many possibilities. It’s a great strategy for making a colorful and high nutrient meal or a pasta salad. Enjoy!

      Yes, I have done pasta in the FD, but only pasta from the store that I cooked and then put in the FD. With fresh, I bet it could go directly in the FD.

      No, it is King Arthur unbleached all purpose flour.
