  • Watch this video to see one of our favorite snacks to make here in the mountains of Appalachia. Granny grew up eating them as a girl. She'd slice a potato thin and lay it on top of the woodstove and then turn to brown the other side before eating.

My dad is from a village in Iran and growing up he told me stories of how his mother would do the same thing, slice potatoes very thinly and cook them on a wood stove to make chips. Pretty cool how different cultures come up with some of the same ideas :)

Oh, my that brought back memories I hadn’t thought of in years! We, as youngsters, my sisters and I would do that very thing on our old Wood stove!! Nothing was better than when Mama would let us place our potatoes on top of that stove!! Such yumminess!!! I shall try your method if under the broiler…so many of the things you talk about I did as a child too…Thanks…

You had me screaming at the screen for a second when you looked up into the camera while you were still slicing! Golly I was afraid you'd slice your fingers! Then I cringed as you got near the end. You brave woman! I won't use my mandolin without the guard thingy. I think I'll try this with turnips...less mess from frying in oil.

I was a picky eater as a kid, not now. My Grandma raised me on Irish potatoes, she boiled them in the jacket (skin), then peeled them smashed them in my plate with homemade butter, salted them and smoothed them over. Delicious, she also made me grits, and homemade macaroni & cheese, fried eggs were a staple. I didn't care much for meat except fried chicken and wasn't big on vegetables. I survived, was actually healthy. We didn't have junk food.

When I was a boy, we didn't have a TV, but we'd listen to the radio after supper. In winter time we heated the house with a 2 burner Sigler oil heater in the living room. So my Daddy would take the top grate off that ole heater and the tops of the burners was right there. My sister would take a arish tater and slice it real thin, plop it on top of burners and fry it real crispy. The other 4 of us were eating them as fast as she could slice them and fry em, while we listened to the program's on the radio. This was in the 1950's, oh boy what good memories us poor folk have from them days.

I grew up eating these as well. It was years before I thought of them and recently made these but my family fries them up on the stove and we slice them a little thick so they are crispy on the outside but slightly soft in the middle. I had a hankering for them one evening and made them. My husband (a northerner who is always pleasantly surprised at my southern cooking) couldn’t stop once he started eating them. His job was salting them once I got them out. Lets just say we didn’t have much come dinner time.

I sure wish I had some of mommy’s rice, milk and sugar right now. She’s been gone since 2019 and I’m 65 now. The rice, milk and sugar was a treat for us when we were little growing up in southern WV. It was so good especially when it started getting chilly outside. We never had the potato chips homemade. I will try those.

There is a small restaurant in Linwood, NC that makes its own potato chips. I'm not sure of the method they use, but they look just like these that you make. Without being able to know how they did them I assumed that they fried them, so I went home and fried some in a cast iron pan. Mine looked and tasted just like theirs and they are the best potato chip I have ever eaten. You are right in saying that you have to watch them closely. They are cut so thin that you can burn them in the blink of an eye.
