      The vinegar and heat kills bacteria which makes it safer for long-term storage and reduces the risk of botulism. Very important step…don’t skip it.

    Those look Phenomenal, I'm am actually about to make mine own batch today and will be posting tomorrow. Although I noticed you boiled them is some vinegar type liquid after they had dried out does this act as a preservative perhaps?

    Perhaps, they say sun dried because they come out the same, whether they’re sun dried or oven dried. Not everyone can sun dry food year round. Some are apartment or condo dwellers and when weather turns cold and snowy, is unlikely you’ll be sun drying tomatoes outside.

    How hot do you heat the oils? It looks like it's sizzling when you pour it in, but I also don't want to shatter my glass jar, so if it's too hot, I might do that step in a pan.

      if you want to store it for long, so dont open the jar until use it. You will keep it for about 6-8 month, may be more

      yes you can use only olive oil if you wish. in closed jar you can store them about 1 year or so

    Love your video! Adding the fresh garlic is ok when everything else is dehydrated? Would dried garlic be better?

      Depends on your flavor preference. I like adding roasted garlic + fresh garlic.

      If you’re not going to eat the tomatoes within a week I wouldn’t use fresh garlic unless you slice it and boil in a water vinegar bath first. Garlic powder is also a good idea.

    I have few questions regarding how to store them. Do you CAN them? like put hot oil up till top and close lid so they can pop and air seal? Do you have any preservatives? salt, garlic, mustard seeds, citric acid are kind of natural preservatives. Why store bought are air sealed and full of artificial preservatives like nitrites and sulfities?

      Acorn, I'm not the person who posted this, and I know this is a month late, but apparently, there is no safe way to can Sun-Dried tomatoes at home as the low acidity and no oxygen is an environment for botulism to grow. Apparently, the reason for boiling them in a vinegar-water solution is to help them keep longer. I hope this helps you or anyone else who reads this.

      you can leave it outside, but if you opened the jar already to use it, better store it in the fridge. Closed jars can be stored outside

    This video leaves us with more questions than answers. Why you boil in water and vinegar. Why use two oils. Why you boil oils. Can’t they be eaten right away ?

      if you want to keep it long time, you need to boil the oils. 2 oils because olive oil is too thick. And no, you can't eat them right away. need to wait few days

      @John Quinn What I am doing is to boil again with the jar firmly closed in water for about 20 minutes for sterilization. After one year on the shelf, they are still delicious.

      It needs to be fully submerged in oil. I had the same outcome when the oil level is below the tomatoes vs when fully submerged 😊

      From 2 kilograms of tomatoes you get 200 grams dried so it is 10 times less

      I store them from september 2019 until now, april 2020 and they are stil perfect

      Island_Girl if left unopened, they can last up to 9-24 months. However, they can last anywhere between 6-12 months once opened. I’d recommend eating over the course of 1-3 months.
      (Of course, eat them AFTER they are properly after 5-7 days)

    Lol Americans always love the easy way. Where is the sun?? It's oven dried tomato!! Belive me the taste is different when you dry it naturally with sun. It's more delicious.

      Not every spot has a climate conducive to sun drying. I think literally everyone already understands the difference between dehydrated and sun dried tomatoes, but thanks for pointing out the obvious.

      In the sun it takes 4 to 6 days.

      You really need to explain why it's ok to put fresh garlic in the mix. Someone could become very ill from life threatening Botulism if they added fresh garlic into a sun dried tomato recipe and didn't take the extra steps that you did. @@tastycookingrecipes1220

    Does the title not say SUN DRIED TOMATOES? Then why do you dry them in the oven. I've been making them for decades and we never heat the oil, and never mix vegetable and olive oil. You should always sterilize the jars and lids before, dry them completely and then sterilize again for abour 20 to 25 min and have leave in the water until it cools off.
