Ahi Kama - Fried Tuna Skins - Backyard Tuna Cutting- Eat the Throw away parts- with Kimi Werner

  • Kimi gets a visit from @Tsutomu Lures Hawaii and together they do a backyard ahi cutting with a yellowfin tuna over 100 lbs. After quartering the fish into beautiful slabs of prime sashimi grade blocks, they prepare the fisherman’s cuts or the “throw away parts” to eat together. Garrett makes fried ahi skin and Kimi grills the kama or collar of the fish and everything is eaten family style.
    This video is to shows many resourceful ways to use a whole fish. Both Kimi and Garrett harvest tuna in only extremely selective, small-scale sustainable ways. Garrett makes his own fishing lures by hand and uses them to go fishing by day. Kimi relies on freediving and spearfishing tuna. They both go the extra mile to appreciate all parts of the fish and share it all with their community.

    But yes the skin is the best we always save everything on all fish .. We was raised to eat the skin with and shoyu with a little vinegar ..ONO thanks to my papa #1 papa we will never starve.. Mahalo 😷👍😜

      Yes, never had tuna, but at least once a week, broil salmon skin side up. Crispy salmon skin, fatty and delicious.

    Blessed that this is my life. I am the fishmonger of my group and the “fisherman cuts” is where it’s at. After a long day fishing and processing the fish to scrape the bones and make spicy ahi is the best. It’s funny raised Hawaii we would never think of putting a fork in ahi. Chop stick was automatic. But now spoon is king. If you eating spicy ahi with a spoon it can only mean it was an awesome day. 🤙🏽🤙🏽

    Oh yeah, when I grew up on Kaua'i we use to fish for ahi and shibis on the boat Kaianui out of Hanalei via Kalihiwai, Capt. Scott Akana. I live West Oz now. I love the sharing and eating traditions of an ahi. Aloha

    When visiting Japan I went to a restaurant that dry ages the ahi center bone to concentrate the flavor, like dry aging beef. Then they bring the whole bone as a centerpiece to your table and give you medium size clam shells to scrape between the bones. Eaten like sashimi with lots of side dishes. It was delicious, but more of an instagram moment with that big bone.😁 The grilled kama was served as the last dish.
    Love your diving vids. I grew up there and did a lot of diving...now I'm old and gray living in San Francisco. The memories your videos bring back are priceless. I even find myself holding my breath during your dives to see if I can still keep up...🤣

    I love crispy fish skin. Here in Alaska the bears prize the skin of the salmon the most, along wit the brain and eyeballs. The bears know where the good stuff is🤣
