Kurkure Bhindi- (serves 5-6 people)
Ingredients
Lady finger (Bhindi)- 500gm (washed and dried)
Besan (gram flour )- 1/2 cup
Rice flour - 1/4th cup
Coriander powder - 1 tbsp
Red chilli powder- 1 tbsp
Dry mango powder (Aamchoor) - 1 tbsp
Turmeric powder(haldi) - 1 tsp
Chaat masala - 1 tbsp
Oil- 1 tbsp
Salt - to taste
Oil for deep frying
Method:-
1. Wipe the bhindi and ensure they are completely dry before proceeding. Cut them lengthwise into 4 slices each and place them in a large bowl.
2. Add rice flour along with besan, red chili powder, coriander powder, turmeric powder, dry mango powder, oil and a little salt.
3. Mix everything well so that the bhindi is evenly coated with the spices and flours.
4. If the mixture seems too dry, you can sprinkle a few drops of water to help the coating stick to the bhindi.
5. Now heat oil in a deep pan and fry the bhindi in small batches. (Do not overcrowd the pan)
6. Once they are crispy and golden brown, take them out with the help of a slotted spoon and drain on paper towels to remove the excess oil.
7. Sprinkle chaat masala and give it a toss.

Thanks for demystifying the secret behind one of my favourite dishes..❤ After eating this once while attending a function I tried to make it at home several times using corn flour and maida... Was wondering how they made it so Crispy ... Then after repeated failures I stopped even trying... Thanks a lot.....by the way you should try Kerala " kasavu saree ( or set saree) " at least once along with gold and green stone emrald necklace ( traditional Kerala " palakka maala")......... You will look like a goddess in it...
