When you spatchcock a turkey, you flatten the surface to allow more smoke and even temperatures and this allows a quicker cook.       Appreciate your support. I love it this way but there is a place for that dark meat that soaks in the renderings like grandma used to do in that big roaster pan.

    Great video the turkey looks awesome. I just picked up a Yoder 640s last week and will be smoking a turkey this thanksgiving this video will be perfect. Do you have a link to the pan you used?

      Just search Amazon for smoking tray. It’s just a cookie sheet size pan with handles and holes. Works great.

    Good video. Concise and to the point with a great looking outcome. Just got my YS640S and looking for tips, techniques, etc. Where did you have the sliding damper set?

      You would but skin would be rubber. If you are using only for the meat that works just fine. I do it like that if I want a smokier meat to use in dishes.

      Who cares what tool he used to cut out the backbone? Seriously, it's just a tool. No effect whatsoever on the finished product. Use what you got.

      @@h.collier3544 yep, I should have kept watching. When I saw him using the boning knife I thought no way. So I just watched the whole video and saw he used Shears. My point was (which I should have made more clear) the right tool makes for an easier job. And yes, the end result was fantastic 👍👍
