  • Here is a quick video of how we make prickly pear jelly from the prickly pear cactus around our home. It's makes for a delicious and beautiful colored jelly/jam. You may not have prickly pears where you're at but many fruit based jellies and jams require the same type of preparations. So hopefully this might give you an idea of how to make a jelly like this.

    Joe, just happened across one of your prior videos. This really brought back great memories. I grew up in Hayden, AZ and my parents and I would harvest the "tunas" and make them into jelly. Great Christmas gifts for out of state friends and family. AND BTW, you posted on what would have been my mom's 102nd birthday. Thanks for a reminder of great times.

    Definitely really happy I came across this video. I live in the SW of USA and we have a ton of this Prickly Pear Cactus growing on our property needless to say most if not all goes to waste. I will definitely be attempting your recipe when they come back in season.

    I just got a bunach of these - I picked them from some napales growing outside a condo complex here in VA Beach VA. No one knows what to do with them, but I do! I got a refresher course from y'all - thank y'all and G-d bless!

      Oh man... you said the thing that my wife has been talking to me about;) I may be going on one soon too.... I have a habit of going hard core on one for a couple weeks and then falling off the wagon for a few months and then back on...lol.... I've thought of making a video about it just to keep me honest...lol

    awesome , in mexico we ate this fruit for centuries , but i didn't know jam can be made from this delicious fruit , youre very skillfull man.

    Your jelly looks awesome! I have to say though--if you guys don't already own one, a steamer juicer is an amazing addition to the kitchen for canning. You can pop the cactus fruit in the basket straight from the plant and the juice you obtain is pure cactus juice. We strain our juice through a clean, finely woven towel just in case there are spines present but the steamer juicer will be a piece of equipment you will LOVE. My mom and I can foods together and they are also great for making grape juice, berry juices, etc.

    Hi,
    You can remove the fine needles with water
    Put all the Cactus Pears in a bucket as you did, add enough water to submerge them all.
    Shake the bucket for few minutes, you'll notice the needles rise to the top
    You can pour out the top layer of water with the needles
    Add a little more water to repeat the process, maybe a 2nd and 3rd time, shake each time
    The water you can use to water plants as the needles wont harm the plants
    You would then use a very sharp knife (or a sharpie) to cut the 2 ends and slice the pear to get the fruit out
    You don't have to use the skin at all, for making thee jelly, the same process you used.
    The skin when dried and shredded is a good source of food for cows and goats etc..

    OMG!!! I just finished a batch of this wonder jelly. I was a bit concerned since the juice is not that tasty, but the jelly is awesome!!! Can't wait for my grand princesses to try it.

    My mom makes this! This stuff is absolutely delicious. By far my favorite jelly. Occasionally she has a batch that doesn't gel which is okay. I'll add some diced fresh jalapeno. Once the flavors have melded, I use it as a base for sweet and spicy bbq ribs or chicken wings!

    I tried this recipe, it is wonderful! It's just the perfect amount of sweetness! I made a double batch and it made six and a half 12 oz jars of jelly (or about 78 fl oz).

    I love the idea of the flames to get the needles off. A friend of mine did prickly pear jam wants and no matter how careful we were in picking and preparing them we still got needles in us.

    About 40 years ago I invented my own expletive vocabulary thanks to the glochids on the prickly pears I was trying to make jelly from. Thanks for the fire tip to fight the battle with the little #*&*s. After watching your video I feel armed for the battle with a blow torch and willing to try again.     My daughter does the same thing with peanut butter. She eats it with a spoon from a jar. We always have 2 open jars of peanut but, one for her snacking and one for the rest of our sandwiches. My family has a cookbook similar to that was given to me by my grandmother.

    Yum, Yum, now I am hungry. Also make a jelly with some of my Prickly Pear (Turksvye)Afr harvest, another awesome combination is Prickly Pear and Guava Jam, delicious. I think I might have mentioned that we get both the Red and Yellow ones here in SA, and the Yellow ones are generally sweeter, but nothing beats that clear red color. How adorable is that proncess girl of yours. Stay well

      Yes, I remember you mentioning the yellow ones... very cool, I'd bet they make a nice color too. I think your guava/PP jam sounds unbelievable too! I don't have access to guava easily but we do have lot so pomegranates that do well here so maybe that will be a future mix!

    your daughter is adorable. (here is me being old lol) mine are both in collage now, but I sometimes just sit down in the evenings with the wife and we talk about the fun times we had when they were that age. its funny when the wife brings up something I forgot. TIME FLYS. I was cleaning up our little survival room in the basement. I call it that because it sounds more manlier then storage room. ha ha. there was some old picture frames with multi pictures of the kids. I stared at those for probably 20 mins. my oldest went to the Appalachian trail on his spring break with some of his friends. (I was putting all the hiking gear back on the shelf's.) he came back and said I didn't know anything about hiking. I looked at him and said that I was smart enough not to head up to the mountains in the springtime. ok enough of me ranting. I want you to say out load 3 times. SEND SOME TO JIM, SEND SOME TO JIM, repeat SEND SOME TO JIM. ROTFL. ok brother you take care.

    I will echo Bumble Bee Junction, your daughter is so adorable. Very smart not to include the specific water bath information since it does vary by location and ingredients. Keep yourself out of trouble, and make people go research something for themselves.

    That looks yummy, great job :) My mom and I make prickly pear jelly every year. We also make some with mixed flavors, try adding strawberry or peach. The other fruits can be added to lend a chunky texture.

    OMG your daughter is adorable... You, well... The disappearing toast was cool... (till ya followed it up with the cheesy thumbs up) LOL !!! 3 parts fruit to 5 parts sugar (with pectin and lemon) will get ya going on most jams... Our prickly pears are still too immature (might be a touch cool for them here - but they do winter over)... Hey, hint: Wet that towel down and wring it out before ya strain - then ya wont lose that 1/2 cup the towel drank... Gotta run... Great vid ! Mark @ BBJ

      I absolutely understand... We raised two beautiful daughters who now each have young daughters of their own... And one more hint: If you go to whatever bank her college account is in now and open a second savings account entitles "dresses" you may (and I say "may") survive her high school years... Then its one more dress down the isle and you are off the hook... LOL Good luck with all that...

      Is it 1 box of pectin to 2 1/2 cups of juice and 3 1/2 cups of sugar? Seems a lot. In the video, the Pyrex is full. Just a little confused. Making it now

    Fabulous recipe. Have never canned before and was surprised how easy. Over boiled initially but came out very tasty. Made second batch today and did much better. Thanks for instructions. Always wanted to use the natural bounty on our property, now I can. Next to try nopales and mesquite flour.

      I can imagine... I've driven over there in the fall and seen lots of prickly pear stubs where the javelina and deer had had some big feasts after monsoon:)

    Wow. Not using the actual fruit pulp at all? Greek prickly pears are so sweet you don't need to add sugar at all, understandably you need to process the pulp from seeds which is a bit of work but so much sugar is a nono.

    We made this one year and it was great. Our cactus was killed later by someone pouring fuel on it. Pindo palm jelly is another good one to make!

    Oh man! Prickly Pears are one of my favourites! It's sad though, I have to buy mine because I never think to have the gear needed when we are someplace that has them available to pick around here!     Thx a lot! 10 days ago I set 6 gallons of prickly pear juice for second fermentation for wine. added 50% of water with sugar, but I'm afraid that it is still very thick and sticky. Next time may be I'll make jelly. Next year.

    Love the video. My problem is that I live in East Texas, so no access to fresh prickly pears. I'd love to try making that jelly. I've made muscadine jelly, apple, orange marmalade, pear preserves, strawberry preserves, and more, but never prickly pear. Now I'm dying to try it.

    Your daughter is just so very cute. I'm happy for you, and you seem so very happy. Why do you boil the jars after you put the jelly in the jar and seal it? I don't understand that procedure.

    Thanks You soi much for the recipe! A Nice ladyfriend of mine prepare ir at Arizona and I fall in love with that! Just she never told me how to make ir! I know the prickle pear cactus but I never have seen it here at Sonora state, México, I can Buy at the market other variación named "tunas" wich ser mostly green and very sweet!     Man I love prickly pear jelly! I had a roommate, before I got married, who was also from Tuscan and his mom would send us tons of jelly every year. Have you tried making it with jalapeño? It's pretty amazing.

    The way we've always canned our jelly is by boiling the jars opening down in water, and boiling the lids (not the rings) and take the jars out as we need to out jelly in. Never had one explode and they make a perfect seal every time.

      Huh?! If I understand you right: After the jelly is put into the jar and the lid is screwed on you THEN put the full jar upside down into the hot water bath to process. This would prevent the air from escaping as the contents heat up and expand.
      I am gonna have to disagree with this upside down method. It is important to purge the air by processing.

      Owen jeynes jam has fruit in it. Jellies are made with only the juice, not fruit.

    spaghetti tongs, notta bad idea, would rubberised gloves work as well? I know grocery stores use thiiiiiick long gauntletted rubber gloves, that could no doubt be grabbed at a cooking supply store. dunno if that'd have better dexterity than those tongs, or worth while.

    I harvest prickly pears all the time. It never occurred to me to burn off the glochids and thorns; what a great idea! What is that attachment on your propane tank?

      It seems like there is still 90% of the fruit left that something could be done with.

      Red prickly pears have kind of a watermelon-y taste by themselves.

    Ok so I checked on about 4 or 5 different videos all making prickly pear jelly. I've followed all the directions and yet have prickly pear juice with lots of pectin. Not sure if I can use it as juice but it has never solidified and when I pour it from the boiling pot into the jars it's no thicker than it was when I started. Now I used honey, agava and a sweetner rather than sugar. But that really shouldn't have made a difference.
    Why do I have prickly pear juice?

    Can you describe what the fruit actually tastes like, or compared to another fruit? I thought the fruits were sweet to the taste when ripe off the "tree", but apparently not. I live in northern Minnesota and no where near any cactus unless I grow it indoors, so no prickly pear cactus in my neck of the woods.

    Check your lid box! New lids no longer need to be simmered in hot water to activate the sealing compound!

    Instead of adding so much, or any sugar, reduce the pear juice for a while. Also jars should be upside down after 'sterilized', and the lids and rings should be handled accordingly as well. Yes, many hours, but so worth it. Scan and make that 'family' book available to the public. :)

    What if i myself also live in the outskirts of Tucson?
    Wouldn't the exact water bath cook time be very helpful then?
