Random Vietnamese here to answer your question, "chè" is an umbrella term for desserts in a soup form in VN. The soup you had there is called "chè khúc bạch", literally translate to white cubes chè, since the cubes originally only has milk flavor. The cube's texture is a cross between panacota and jelly is how I would describe it and the dish usually consist of fruit, almond flakes and ice, the water itself is a light fruit syrup. Its on the lighter spectrum of chè, not too sweet and is very refreshing. Hope this clears it 👍 Btw, you shouldn't run when crossing the street, just walk steadily and keep your eyes on the motors. It feels scary at first but they will pay attention to avoid you I promise, just don't run.
