Honestly, as a Dutchman, the 'young matured' and 'matured' are probably the best tasting ones. Anything above that and it's starts to taste pretty funky. But if you wanna make a grilled cheese sandwich, or something similar, you gotta hit it with a slice of 'young Gouda' and 'extra matured'. That way you get a really bold flavor but don't end up with a dry toasti.
I eat this everyday after dinner and I'm from Portugal 😊 we also have a similar cheese called "queijo da ilha" wich means island cheese, you can get different aging as you like from 6 months to 2/3 years even more it really depends on your taste.

You can find tons of 36-month aged cheese in France or Italy, they get flaky and build up Umami compounds over time. These can get very strong and sometimes it's better to use them as an "ingredient".
