I recently went to a silent retreat and when I looked at my food I took the time to appreciate where it all came from...the animals (meat, cheese, etc), the plants, the hands that picked it, the hands that processed it, the hands that moved it, the hands that prepared it. It was overwhelming to think about, esp. in today's environment.
I also am grateful for animals that we use for our nourishment. In praying over food for our bodies, it is also important to be grateful to the farmers who worked so hard to provide food to us. Wasting carrots, etc. is not good but can become part of the soil; but when lives are given for our sustenance, we need to waste none of it. Thanks be to Our Maker for providing food for us. Hello Robin! So glad you had a Happy Thanksgiving! There is so much waste that is going on. I've really noticed with the younger generations that if something that didn't use to have dates marked on them back in my time now they just throw it away as soon as the date passes! I've tried to tell different people but they look at me like I have three heads or something. It's so wasteful. I really think there should be something done to inform the ones that don't believe or don't know it sure would help save a lot of waste and over consumption.Have a great week!

It's been a long time since I've made a pita pocket sandwich. This looks good...I think I might like this better than a turkey wrap. Boiling the carcass is smart...all that good broth is useful for a lot of things, soup comes to mind, gravy, dumplings is a favorite for me.
Your Sunday supper looks good. Your fireplace looks good but is far different from ours. Our fireplace burns wood and is connected to our radiator system and heats the whole house. Our other choice is to use pellets in the pellet stove in the basement. It’s also connected to the radiators to heat the whole house. We don’t use gas or electric to heat the house.
Do you blanch the potatos before freezing. The ones you sliced to fry.? Thank you for so many ideas. I have a small amount of memory loss and forgotten so many things. Today i remember so good time to ask questions. Write things and save for days when memory is all foggy.
I will cook up a big batch of mashed potatoes.Then Ill spray a muffin pan and spoon the mashed potatoes into the muffin pan then I freeze over night.Then I remove the frozen potatoes and put them in a freezer bag.Then when I want to eat mashed potatoes Ill portion how many I want and microwave them.About two for me.
I had no leftovers 😢 My cousin's had a get together so there was nothing to bring home. I would love to have a turkey sandwich with lots of mayo and pepper.
When I was a kid in the 1960s we started going out for thanksgiving, but we missed the leftovers so mom also made a turkey and some other dishes. How’s that for love?

Mary, I actually boil the potatoes completely done. When I fry them it’s just a matter of browning them. Very fast. Thanks for the question.
