Love it! These burritos triggered a memory from childhood of my grandmother buying Patio brand frozen burritos 3/$1 or even $0.25 if they were on sale. Then when she wanted one she would wrap it in a wet paper towel and microwave it. If she was “being fancy” she’d add half a slice of American (Reagan cheese she called it.) or a spoonful of canned hotdog chili. 😊
Robin, my dad used to cook a wonderful dish for our family, but he used hamburger instead of sausage. He made this when our food supply was low before payday. He scrambled the hamburger til done then added the beaten eggs like you did. Then, he added whatever cheese we had on hand, usually Colby or American. We just ate it on a plate with toast on the side. After I grew up and cooked this for myself, I added banana peppers. DELICIOUS! I love how you chop and freeze your produce for future meals, to keep it from going to waste. I chop and freeze a lot of veggies from our garden in the summer but that's the only time I've done that. Duh! I guess I have gotten stuck in routines and that's why it's so nice to see how others do things. I've learned so much from you and am excited for all I'm yet to learn. Love it! I'm not the only one with freezer bags of chopped up produce and leftovers in my freezer. We do this so nothing goes to waste. A new friend was over to visit and we had a quick stir fry from the freezer for lunch. Out came the frozen rice, chopped pork chop, diced carrots, sliced garden vegetables, chopped scallions, chopped red pepper, and frozen peas. I did chop a fresh onion for the recipe and half went into a freezer bag to be saved to make soup. Tomorrow I'll make a soup using a container of broth saved from two cans of salmon (plus four tablespoons of salmon). The two cans of salmon were for salmon loaf or patties. The broth makes an excellent simple soup. I toss chopped broccoli stems in that, started off with onion, celery, and carrots. It is finished with a cup of cooked rice and parsley. Broccoli stems contain the same good nutrition as the florets. Freezing the chopped stems completely changes the texture. In a soup they are del8cious.

I make my breakfast burritos with sausage egg and hashbrowns. I cook hashbrowns separately then add to sausage egg mixture the cubed potatoes work the best
If you take about 1/4 cup of the sausage and add it to your leftover Spanish rice you can stuff some of your bell peppers and top them with a small piece of bacon or cheese or both if you want 😂. You can also stuff the peppers raw and freeze them for when you want one. I add a little bit of green peas and corn to mine, but you can still go with the Spanish theme and add corn, black beans and a little shredded cheese. Then top with some of your fresh salsa you made. If you measure out 3 1/2 cups of your tomatoes and cook them until they are firm yet slightly tender, then cool them and add to a blender or food processor and add in these ingredients: remember you are adding in your tomatoes you cooked with juice too. 2 cans , juice too, Rotel( if you do not like your salsa hot go for mild or one can of Rotel hot and one can of roasted tomatoes with garlic) Fresh cilantro - 1/2 cup( I do not like cilantro but yet this salsa lacks flavor without it and you can not taste it! Juice of half of a lime( lemon just lacks in this!) 1/4 teaspoons of each( salt, sugar, cumin) 1- clove of garlic 1-jalapeno pepper 🌶️ Now blend all together, until smooth. Serve with chips. This makes up enough to last a while, so freeze what you think you can’t eat in servings you might use it for, but I hate to tell you this stuff is addictive! It is that good! I love heat so I make as recipe calls for, but if I only have one can of Rotel I use the can of roasted tomatoes with garlic if I have on hand. It is good both ways! This salsa taste just like the restaurant’s “On The Border” salsa you get at the restaurant. I find the jar stuff just doesn’t compare to theirs in their establishments.
I love to make what I call a Spanish rice casserole. Pretty much like you do, but with a little bouillon instead of salt. A little New Mexico red chili powder. I also add pinto beans and corn. A lot of onion and green chili. I do all sorts of things with this mixture. I add some more pinto beans to a toasted tortilla, a little bit of plant based grated cheese I make, and a lot of times I use soy curls I rehydrate in some chicken like seasoning to increase my protein. Sometimes I do like you did and make a breakfast burrito with my scrambled tofu. And salsa. I have even wrapped it in corn tortillas with extra beans or the soy curls. Covered it with enchilada sauce and the plant based cheese I made. ( yes, it melts or I can make cheese sauce if I prefer) and bake it in oven. Serve it with a great salad. I also like to take the leftover enchiladas and put it on top of a salad with some French dressing. Not the creamy French but the red one, like Catalina dressing. A friend showed me this, and I was surprised how much I liked it. Spanish rice can be done so many ways. And in my opinion delicious alone, but it can also be turned into so many different things.

Great food ideas using inexpensive ingredients! You inspire me to do more! Was the rice you used long-cooking or instant? I've never prepared Spanish rice that way and want to try it! Today, I'm making applesauce in my crockpot. I am undecided if I will can them up or freeze. I'm using 6lb of apples I recently purchased for $1.99 per 3lb bag! Blessings from Indiana. ❤
