      The pans are medium deep foil pans at any restaurant supply store. The racks for them are Vollrath stainless steel drying racks. You can find them on Amazon. They fit right inside and come out perfectly clean in the dishwasher!

    Are you able to use a regular full hotel pan? Or are those too deep?

      You can, but I try to use shallow ones for better air flow around the ribs. If they’re too deep, the flow isn’t as good around the ribs.

    Hey, can you explain again why you didn't use a binder before you seasoned up these ribs.

      Great question. When we’re cooking for competition, we want as much flavor as possible to get into the ribs themselves. Using a binder, such as mustard, creates a block when using multiple rubs. So by seasoning directly, we able to get more flavors and layers of flavor, which helps when we’re trying to impress judges who will only take one bite of our food. Hope that helps!
