I study pastry, 1 egg normally weight 60g. 10g for the shell 20g for the yolk and 30g for the white. Hope it helps😊

千萬不可呀!畢竟把蛋糕最靈魂關鍵的麵粉,全替換成杏仁粉,兩者食材之間,本身性質就差太多了,再來這款蛋糕又是完全沒打發以及沒有泡打粉情況下,這樣蛋糕在完全沒麵粉筋性支撐下,應該除了烤起來非常難看之外,口感應該也會非常難吃呀!(這應該是基本烘焙常識呀!如不信邪也是可以有實驗家的精神試做,但依照我多年烘焙經驗(現職是烘焙師),真心覺得如沒做過的話,應該至少先照食譜比例去做,之後在依照你自己喜好去微調整吧?而不是都沒做就在問說可不可以用什麼食材取代,在製作麵包蛋糕時,並不是所有食材都能替代的。即便你用相同食材,但如你比例不對,它一樣也是做不出來的。)

不行,依照我多年烘焙的製作經驗(現職是烘焙師),因為栗粉(玉米澱粉)本身是沒有任何筋性的,如全部都用栗粉替代,做出來的蛋糕會因為沒筋性支撐,蛋糕會整個直接塌掉。
是的,加玉米澱粉只是增加柔軟口感及防止蛋糕塌陷
以我的經驗我覺得不行,兩種粉性質不一樣。

滾水,否則烤箱溫度會降低太多。水只要有超過蛋糕模具1-1.5公分以上就可以了。最主要是要恆溫和水蒸氣。
