This is actually Carnatic music. Those transitions don't come easily. Takes years of practice. The transition is known as Ghamakas. Gamaka, also known as gamak, refer to ornamentation that is used in the performance of North and South Indian classical music. This style is south indian classical music its called carnatic music
Most carnatic music are praises to hindu dieties. This particular one is for lord ganapathy. Its in sanskrit language and not the singers native language.
It is almost an insult to say they use studio mixing to make this correct. Bcos he perfoms these songs live with this perfection. Eventhou i dont know the case of tbis particular song, there is high chance for carnatic songs audio versions like this cud b from a live concert.

The later part, you are listening to Solfatization on the basis of the ascending and descending notes used in the specific Raga and the accompanist on Violin is mimicking the notes the singer sings. Four hours daily for ten years may bring close to what this maestro is doing!

Because every word and syllable in it is based on "sruthi "thalam " layam ".. raagam.
In canrnaic music, vocal is important.. not musical instruments.

And the coolest part is anybody can learn to sing like that if u practice 6 hours a day for 20 years and keep practicing your entire life to maintain that level, that's what these classical singers do.
