Me and a coworker actually did this for months on end with the whole office. Some of them found out after a couple of hours, some after a couple of days and some after months. There was even a coworker who never found out what was going on with her computer. It was the funniest period at work. Listening how they loudly react and swear at it. Some even contacted IT department, reinstalled drivers, constantly rebooted their computers, even considered reinstalling windows.
1) Pick the co-worker with the messiest desk. 2) Everyday scotch tape an important item from their desk to under their desk. 3) See how many days you can go for.
We incorporate theme days in our office-themes like: Inward Talk Day or Face Your Hips North All Day Long Day or Falsetto Meetings Day. Just keeping it real.
similar to using a screenshot of the desktop but deleting the icons, you can take a screenshot of the desktop, rotated 180 degrees, and then rotate the entire screen by the same amount so the screen shot looks like it's right side up. You also then hide the icons, so when they move the mouse around the mouse goes in the opposite direction from what they're trying to do.
When a coworker returns from lunch tell them they had a missed call from a "Mr Lyon" requesting an urgent call back. Give them a post-it note with the phone number for London Zoo.
I heard a story about somebody who did this. First, he a few friends to help out. They of them cooked up a few batches of clear sugar glass. Then, overnight, they removed the windows from his office. They only removed the ones going into the rest of the floor, versus the ones leading outside. Then they took the sugar glass windows and installed them. The next day, the guy pretended to rage and grabbed a baseball bat that he kept in his office and smashed the windows. His friends came running from their cubicles, bent down, and began eating the sugar glass. The funniest part was when one of the horrified coworkers ran to get their boss and the boss(who was in on the prank) acted like it was perfectly normal to eat smashed glass from a window.
At our office, if someone leaves their desk without locking their laptop, we change their background and screensavers to David Hasselhoff's pictures. One of the developers have actually created a little batch file to do this automatically.
I've done the screenshot trick to a boss back in the day. Take it one step further, create shortcut keys so when he asks for help, you can make it look like programs are opening for you just fine.

Every time your computer plays the log in chime, offer your coworker a mint. Do this for months. Then suddenly stop giving them mints and see if they ask for one when they hear the log in chime.
The sad part of pavlogs dog experiment....they started to hit him occassionaly when the bell rang. My the time they neared 40/60 treat/hit...the dog actually went nuts. Try it ;)
It's because of people like you, that I obsessively lock my computer and take my phone with me, every time I get up from my desk. ;) Also, one time someone left their security pass lying around, and when they went to pick it up, they discovered I had replaced it with an elaborate series of clues in which to find it. As I recall, one of them required him to borrow someone else's pass to get into to a room to get it. :p
Pop the keys off the keyboard shuffle them around and put them back in new locations. Doing that you can leave simple messages for each other... Unplug the mouse, most people don't think to check that. If you can get away with it with no repercussions, it is always fun to super glue items to the desk...not recommended for oak or mahogany desks...
Add 50-60 carriage returns to the end of your email sig. Delete "re:" from the subject of all emails before sending. Reply "unsubscribe" to meetings you can't attend.
ive actually done the one with the photos. our secretary at dr. pepper had all these pictures of her only child. i put myself in his place. everyone was amused but her. i got counseled. and once i arranged the clothes of a very religious coworker (while he was at the gym) in such a way that i could tell others he had been raptured.
We used to do funny stuff at my last job all the time! One of my favorites was when we forged really touching and thoughtful cards from a grouchy employee and sent them to his coworkers and for an entire day, everyone would come up to him and thank him for his kind gesture! Hahaha they never knew but he sure did. And then another time we printed cat photos and taped them to the back or bottom of literally everything on aforementioned grumpy employees things. Mouse, monitor, notebook, stapler, pen jar, stack of papers, post its, etc. He found them randomly for months!
Awesome stuff. My favorite prank but it takes patience, is to find out a co-workers Ex High School boy/girl friend, bully, teacher, name, somebody from years ago that they don't know anyone else knows...then in a large group meeting have another co-worker interrupt the meeting and tell the person that (name of ex girlfriend) is here from the IRS & they said it was important, to see you in the lobby. Video tape their reaction... The random word in the meeting is great. Doing that next week.
I sing along to music of the heavy metal kind, and it somewhat amuses people around me, so there's that... Yeah, I got nothing. You guys, though, have some funny-ass videos; been watching you for a while now, always a good laugh!

We have random nerf gun battles at our office to keep it fun. As for pranks, affix children's stickers underneath every item and stack of papers on their desk. They will be finding those for years, and each one will be harder to remove.
If they have a traditional keyboard and are a hunt-and-peck typer, pop the M and N keys off and switch them. I did this to one of my coworkers, and his password apparently had an M in it. For five solid minutes he stared at his keyboard as he meticulously pounded his password in over and over. Eventually he got mad, threw the keyboard across the room (which was impressive, considering it was plugged in) and stormed out of the building. Or pop off the number pad keys 7-8-9 and 1-2-3 and swap them so the 1-2-3 are up top.
We actually did some of these things at my previous job. My current company is too uptight to even attempt anything like this, however. It's like being in a hospice.
I think if you're a Dvorak geek, you can try this. Set your coworker's keyboard to Dvorak, and when he's confused and asks for your help, type on his computer like you normally would and show that it works fine. I think this trick will baffle even IT support because of how hardly known Dvorak is (sadly).

Then, after they've gotten used to the weight, remove them all at...Wait, I saw that on The Office. Ok, place desktop items into Jello and then place it into the fridge to gel. Just before they come in, put the .....Shoot, another prank from The Office. If you have a really schizophrenic co-worker, send them faxes from the future. From themselves.... I don't know about Mac, but in Windows you can hide all desktop icons using an option in the right click menu. It looked like you had to delete or move all those stuff from desktop to somewhere else on the Mac.
I used to remove the track ball from a coworkers mouse. Optical mouse ruined this for me. I would also unplug the handset from her phone but leave the cord tucked underneath so it looked plugged in. when she would go to answer the phone... I would put scotch tape around the top of her memo note cube so she could not peel off the note paper. I would lower the seat on her desk chair and hang the pictures in her office upside down.
Here is a funner work prank. Must be super cold outside(Midwest/Snowy) Offer to start a co-workers car for them when its super cold, like -10 out. When you start the car, crank the AC on max. It will be colder in the car then out side. They might give the cold shoulder for a while. :)
You can recalibrate your coworkers mouse so it will move the cursor down or sideways if he moves it up...takes ages to reset even if you know where to change it back!

One (way older) female boss had an annoying habit of sending a message that required a response, to her underling's monitor (old school IBM) when we went to break, so she would know when we got back. Another coworker filled in "I love you Donna" as the response, unbeknownst to the owner of the monitor. We had to write our names on a list at the secretary's desk when we left for break or lunch, so that she would know when she answered the phone, who was out. We made up an employee name and always put down that fictitious name every time we left and marked him as "in" when we returned. She would ask "who is Dan?" and we would always describe him and say he just went around the corner, you just missed him. Programmers can be creative when we are bored.

Take apart a persons chair, insert a car etherair freshener (best is the pine smelling tree) and put the chair back together. Every time they sit down the get a wiff of the smell - it typically lasts for about a month.
I ask the receptionist where the building manager is when I know that she's gone to the bathroom... After the receptionist indicates her location is in fact the women's restroom. I make my way in the direction of the women's restroom and nonchalantly mention that I'm just going to pop my head in and ask her a quick question... Then I watch the expression of shear horror on her face as I reach for the door... Normally then I burst into laughter and go back to my desk.
I have two unoticable mouse tricks: 1) cut an exact outline of the sensor in paper that matches the color of the mouse, stick it with some Removeable putty... but they can notice that there is no light, which leads me the evilest of evil... : 2)get some tape, unplug the mouse and stick it to JUST the two middle pins... the lights will be on but not the data! :D
Replace the lights in cubicles/offices with black lights. Paint phosphorescent eyeballs on the family photos' glass or messages on surfaces - just don't go too far. In our office to exterminate fun we have people who patrol the laptops in the office. If you leave it unlocked, you get a "ticket" and a fine (deduction from your salary) for not maintaining a secure environment after one warning. We don't have assigned offices or cubicles so there is no one to switch spaces with as it is cheaper not to have assigned spaces.
On an unlocked computer, go into the mouse settings and reverse the left and right button, also change the double click speed to be super slow or super fast
Add an autocorrect rule in their text editor that changes their name to something stupid. A colleague once sent out a letter that said its name is "Dr. Madness"...
Get a typical bottle of hand sanitizer, like the pump kind that you can see the stuff in the bottle. Now, pour it out. Refill it with "personal lube", set it on your desk and wait. The reaction when they've been running their hands together and it doesn't start to dissolve is too funny to describe.
when a coworker is out of the office for a week or more clear there desk of everything and remove their nameplate from the door or cube or draw a chalk outline of body next to their desk and leave a few randomly numbered evidence tents laying around, add some shell casings for extra shock value

We have a baby doll that we hide in random spots around work. It'll be gone for months then you'll look at a random place and see it's eyes staring at you, pretty fun.

Take apart a persons chair, insert a car etherair freshener (best is the pine smelling tree) and put the chair back together. Every time they sit down the get a wiff of the smell - it typically lasts for about a month.

I ask the receptionist where the building manager is when I know that she's gone to the bathroom... After the receptionist indicates her location is in fact the women's restroom. I make my way in the direction of the women's restroom and nonchalantly mention that I'm just going to pop my head in and ask her a quick question... Then I watch the expression of shear horror on her face as I reach for the door... Normally then I burst into laughter and go back to my desk.
I have two unoticable mouse tricks:
1) cut an exact outline of the sensor in paper that matches the color of the mouse, stick it with some Removeable putty...
but they can notice that there is no light, which leads me the evilest of evil... :
2)get some tape, unplug the mouse and stick it to JUST the two middle pins... the lights will be on but not the data! :D

Replace the lights in cubicles/offices with black lights. Paint phosphorescent eyeballs on the family photos' glass or messages on surfaces - just don't go too far. In our office to exterminate fun we have people who patrol the laptops in the office. If you leave it unlocked, you get a "ticket" and a fine (deduction from your salary) for not maintaining a secure environment after one warning. We don't have assigned offices or cubicles so there is no one to switch spaces with as it is cheaper not to have assigned spaces.

On an unlocked computer, go into the mouse settings and reverse the left and right button, also change the double click speed to be super slow or super fast
put a sticky note over the senser on the bottom of their wireless mouse
Add an autocorrect rule in their text editor that changes their name to something stupid. A colleague once sent out a letter that said its name is "Dr. Madness"...

Get a typical bottle of hand sanitizer, like the pump kind that you can see the stuff in the bottle. Now, pour it out. Refill it with "personal lube", set it on your desk and wait. The reaction when they've been running their hands together and it doesn't start to dissolve is too funny to describe.
Convince a coworker that it's Friday when it's only Thursday.

when a coworker is out of the office for a week or more clear there desk of everything and remove their nameplate from the door or cube or draw a chalk outline of body next to their desk and leave a few randomly numbered evidence tents laying around, add some shell casings for extra shock value

4 years ago we did the Justin Bieber prank to my sister. She just left for college so I got to get some of her furniture and underneath 1 of the computer chairs and behind a poster we found two Justin Bieber stickers XD
