A family favourite here too!!! I put them in the freezer for a couple of days, until I have time to do the chocolate coating. Once you dip with your fork, or whatever, tap the handle on the size of the bowl a couple of times, while balancing the pb ball, and excess chocolate will drop off. Oh, and, the Christmas Rice Krispies are cute with these too. Hint: a Kitchen Aid counter mixer makes this super easy.
My mom made these too. She used chunky PB and just drizzled chocolate instead of dunking, but pretty much the same deal. We gobbled them up! Now, I make them with dark chocolate and the sea salt is a must! I'll give it a go with the cereal. This was so fun to see.
I always use kosher salt in my buckeyes. It just elevates that peanut butter to the next level. You mentioned buckeyes are "dense". I put honey in mine. Not enough to loose shape, but enough to make them smooth and creamy. So good. Gonna try these today, after I promised myself I was done making Christmas candy, 15 different candies later.
I LOVE this recipe! About 10 years ago, I learned about adding rice krispies, and I love the crispy crunch in there, with the smooth peanut butter. They are SO good! Thanks for sharing the recipe!

My grandmother’s rule was to use one of her ‘hat-pins’ when dipping candy in chocolate. And yes.... it was a RULE. And actually, no specialized kitchen tool works better than a hat-pin. Honest.

you could use parafin wax then melt your choclate into it - do it over a double boiler - that way you can remove from heat when melted -- and get them all dipped - makes them nice and shiny - plus hardens faster, btu stays soft...

I made these originally with graham cracker crumbs, but when my daughter needed gluten free, the rice cereal allowed her to eat one of our favorite Christmas treats. They are the best and soooo messy to make.😂
the chocolate is not tempered right? if you put these in a glassine bag at room temp will the chocolate get tacky and matte finish and a mess?? I always thought that if you make like chocolate truffles you have to temper the chocolate so the chocolate is hard and shiny at room temp?
did you know, that this is really called Chocolate Mouse - and it was created in Newfoundland Canada eons ago..lol-- you should try them with a wee bit of coconut instead fo vanilla.... mmmm...

I add Maple syrup to mine when making peanut butter balls it's a game changer 😋

We make a cookie exactly like this except we put a Hershey kiss in the center and a couple sprinkles of sea salt. They are sooooo good!!!!
