  • Here is the evidence on whether or not we believe the Instant Pot Max is safe to use for pressure canning. We present scientific evidence to support our claim.
    Correction: The Presto digital canner has NOT been approved by the USDA. Their faked logo and disingenuous language..."meets USDA canning guidelines" is disappointing.
    Sadly, the Instant Pot Max is no longer available.

    Here is the information on the logger. I purchased the HiTemp 140 logger with the 2" stem and no shield from Thermoworks in American Fork, Utah. You will also need the connection kit and a windows computer. The software is a free download from their site. Call and talk to them--they were very helpful--great customer service.

      You got that right! We think that is in conflict with our personal ethics and we do not want to be beholding to anyone for sponsoring us. We are most interested in getting accurate and safe information out there for everyone who wants to learn about emergency preparedness without pushing products at them.     As an ER nurse, I once had a patient present with symptoms of botulism intoxication. I knew what caused this. Her home canning. I just could not explain to her in a way she would understand what, caused her condition and how to prevent botulism in the future. Boy I wish I had your RUclips channel then! You were wonderful.       @@shannonfbc1 both sad and scary, I think there are many ‘old school’ home canners out there whose moms and grandmothers only ever did water bath canning. Due to survivors bias they assume it’s because their methods are safe. I have two older family members that think this way and let me tell you, the low acid canned goods they give us don’t get eaten 😳😞.

      @@RaqVA and its impossible/pointless to argue with them because they claim the Amish still use water bath canning for everything. The only thing is, I've never seen anything but high acid canned foods for sale in our local Amish stores. Idk where they're getting their info.

      @@shannonfbc1 unfortunately there are a ton of new homesteaders and canners sharing what they call "rebel or renegade" canning recipes which is truly Russian Roullete canning. When asked if they understand the risk, they say yes, but never share that with their viewers, they only say "do your own research" which imho is just a haughty way of telling safety first canners to mind their own business. In the next coming years, I expect to see many new cases of botulism.

      @@RoseRedHomestead I appreciated the self-testing portion. Obviously if it isn't getting up to 250F then the pressure isn't getting up to 15psi. The reason why they recommend 250 for like 15-20m is because that destroys the toughest spores some of which can stand 5m of 250F. It is what sterilization autoclaves for biological scientific experiments use. It really isn't getting to sterlization temperatures and pressures, but I am sure it kills a lot of stuff. Thank you for having the data.

    This was a “Master Class”! It was wonderfully done. The time you took to perform all of these tests is a real labor of love. Thank you so much for doing this. I’ve been considering buying the IP Max for several months now, but I’ve held off because of the fears of it not being effective. I’m so relieved and will be ordering my Max as soon as possible. Like you, we are empty-nesters and a large pressure canner is just too big for our needs. I love your channel and look forward to each and every video. Thank you again.

    I love how you took the time to show the roadrunner. Growing up in the Utah dessert, I remember seeing so many roadrunners.
    On a second note, I finally got my grandma's Presto pressure cooker from the '30s or '40s refurbished and ready to go. I'm just waiting to schedule an appointment with the Extension Office to get it tested and recertified.

    You did an amazing job of reviewing the IP and explaining botulism and how it thrives/dies. I have been using my IP Max for canning the last month and have been loving it. I no longer have the stamina (between age and cancer treatments) to do large batch canning, so this has been wonderful to have. And, by the way, you and Jim are adorable!

    Pam, you and Jim are brilliant! I’m an M.D., M.S. and was glued in place for every minute of this video. You remind me so much of my younger self. I was also a Registered Medical Technologist, and loved the lab and creating experiments with patient data. I’m now 76 and retired, so just thoroughly enjoy watching another like-minded professional.     I've always wanted to do canning, but honestly was scared to try. Tonight I went on Amazon to just look at what they had as far as the canning appliances, and when I read about the Instant Pot, someone actually mentioned your name in the Q&A section, and to check out your videos. I am thrilled to have found this video and your page! Thank you so much for such a detailed report and especially the example at the end on how to can chicken. I am ready to give it a try.       I’m in the same boat as you! New to canning and was going to get the nesco but when I emailed them regarding availability was informed they couldn’t even guess as to when they will have them. So this is a great alternative for me.

    I FINALLY took my IP Max from out of the box after I made my own veggie stock using veggie “scraps” I’ve been putting in the freezer and from my garden. I rewatched your video and I am so happy to be able to now have 8 pints of veggie stock on my shelves. Thanks! I ❤️ your “how to” videos.

    I've been canning at 8500' with the Instant Pot Max for 3 months. It consistently cans between 244-248°
    I've discovered if you pack something really cold and dense that, if it drops below 240°, that it will abort.

      That is good information about the aborting--another great safety feature. Your temperatures seem good, but for me, I would want to know the temperatures of the food in the jars to be certain. Mine never got above 247, so on the surface, your experience seems ok.

    This video and YOU are just bonkers awesome! I will not trust my old pressure canner which doesn’t even show what the pressure is, and will buy this IP Max. I am nearly 80 years old, feed only two of us, and I am severely visually handicapped, so this will assure me of the safety of my canned food. I cannot begin to thank you enough!     I love the data. Speaking as someone in steam plant operations, if you know the pressure you can interpolate the temperature with a steam table. For 240°F you need approx 25 PSIA. With that said, I'm confident my instant pot duo is able to maintain the pressure. I'd still be interested in doing some experiments with a logger.

      Thanks for your informative comment. Sadly, the Duo has been tested by the Utah State University extension and was found to not reach high enough temperatures to kill botulism spores. So, please be careful! The Max has passed my unofficial testing at 5000 feet and is the only Instant Pot with a canning cycle so far.

      Lower altitudes improve the results. As altitude increases, time and temperature need to increase.

    Thank you for doing this testing. I have been using the Instant Pot Max for canning for several months. I have not had a false seal. I sit and watch the canner the whole time to make sure that the time does not go below 240, and it has not gone below 244 doing the canning process. Safety is first. Thank you again for doing this testing. Change is good. This will help people who want to go this route, and provide options if they would like to use it.

      Thank you for your comments. Those temperature levels appear to be pretty good! It all depends on the temperature of the food in the jars, but my data show that at those temperatures showing on the outside, the food on the inside is within the safe zone.

    Based on your videos, and the research that you provided, I began canning with a weighted canner. Although pleased at my work, I am fearful of every jar I open, boiling 10 minutes before eating.
    Watching the IP Max for a while, I debated up until they offered it up for half price. I bought one immediately.
    It took me a few days, and a few simple foods, to become comfortable. Today I canned my first meat in it. No anxiousness, no worries. Just a calm process. It did everything as I expected and I am grateful to you. I wrote down every step you experienced and it was like you were there every step of the way! Thank you, humble teacher!

    Such great advice!!! i went and ordered the datalogger and trust me, it validated what you are saying about making sure your Instant Pot Max Canning feature gets into the 'kill zone'. Having this scientific evidence actually makes me more confident that i wont be killing off my family with botulism. The datalogger is pricy but no comparison to not confidently knowing if you have destroyed the potential for botulism....thank you for this education Professor! Priceless!

    This was SO informative. When I first saw canning in an a Instant Pot I thought oh no, I glad something told me to watch. I love the idea of small batch canning.     A person who was reviewing an electric canner on Amazon recommended that people watch this video before purchasing that product, so that we could learn how to can safely. I am blown away! I’ve always been terrified of canning for fear of botulism but now I feel more confident. I do need to do more research about which psi is safe at my altitude of 5,545 feet above sea level (Colorado). But this is a great start. I don’t need to can a lot because it’s only my husband and me, but I would love to can and provide as gifts to family, friends, and neighbors. I love to share anything I am blessed with.

    Thanks for this video! I purchased my new Max based on it! It arrived yesterday. Yesterday we started processing an elk we’d been given. My freezer is pretty full. I’ve run 2 batches through it. I’m an avid canner & think the Max is going to help me immensely! Appreciate your thoroughness!

      We have several videos on pressure canning in a regular canner. I much prefer a regular pressure canner, but I do thin=k the Max is safe enough that I use it for our family.

    This is one of my favorite canning videos, and I have watched it multiple times, as I’m watching it again I look over at my counter where I’m currently canning in an Insta pot Max. I was so impressed with your video on how you scientifically identified and tracked and verified the internal temperatures of the food that makes the difference between someone saying oh we’ve always done it this way and this is how you got to do it versus this is why you have to do it.

    Bless your heart. I am thrilled with this tutorial. I have resisted getting an InstaPot because I feel like it is another appliance I don’t need since I already own a regular pressure cooker,(not for canning use), a rice cooker, which I rarely use, but my husband does, and two crockpots. That being said, I have never done pressure canning and
    am now giving it serious thought, but my age, I’m a few years older than yourself), my semi-handicapped status, make me not very enthused about a big pressure canner. This small one just might work for the two of us at this time. I keep hoping I won’t live long enough to experience the latter day tribulations, but they seem to be encroaching fastly upon us and the prices are now going up quicker than I expected. I will look into getting this kind of InstaPot and giving it a go. You do take the scary down to a tolerable level for me. So thank you.

    I started using my Instant Pot Max today and I love it!! It is so easy to use. The only drawback is that you can only do 4 pints at a timel I did 24 pints of tomato juice. The actual cooking time with the venting, cooking and cooldown was much quicker than my big presto canner. I liked the fact that you don't have to watch it continually to make sure the pressure is staying where it is suppose to be. I have set out 3 lbs of ground turkey to thaw and tomorrow I am going to do 3-4 pints of turkey. Thank you for your knowledge and your willingness to share it!!

    I know someone who knows someone who's entire family died from botulism from home canned food. She was the only one who didn't want to eat it. All these videos thinking pressure canning is a hoax and unnecessary, but you're gambling with your life if you don't pressure can foods that aren't acidic! Thank you for the great explanation. I have a big old fashion pressure canner and it makes me so nervous. I really like my new Instant Pot Pro Max, I can put in 4 pints and set it and forget it and not have to worry about it. Love it!

    This is brilliant! Thank you for all your efforts and time and costs. I am blown away. What I wouldn't do to be a fly on the wall in a classroom with you!
    Perhaps you may consider trying pureed foods such as pumpkin. I would wager the Instant Pot Max would heat and maintain pressure inside the jars more consistently than a regular Presto canner. I would be interested in seeing an identical presentation for this kind of food density please. Thank you both anyway for all your time and video initiative!

      Since the USDA does not recommend pressure canning pureed foods, I am reluctant to put anything out there that could be misconstrued and lead people down the wrong path. but it is an interesting idea!

    I’ve been wondering about my pressure cooker because I have a dial version (no temp settings-just timer) Now I know that I cannot be sure of its safety.
