Comparing the Presto Digital and Instant Pot Max for Pressure Canning

  • We have done scientific testing on both these pots and found them safe for us to use at our elevation at 5000 FT. This video compares the pros and cons of both using a bit of science information to underscore our findings.
    IMPORTANT! We just did a follow-up video to this one on pressure canning ground beef in both of these canners. I also added some clarification about how the Presto Digital works. There is good news here about the Presto Digital! It will be released Saturday June 25th.

I'm told that the device isn't accurate enough to reliably maintain the necessary temperature. It would help a lot of people to get more hands-on input on the subject.

    Wow! This is a GREAT video. You explained the difference in terms most people understand and explained how the pressure and temps work together. But, I think for now, I will keep my old Presto model canner. It took me a long time to be comfortable using a pressure canner and now that I am comfortable with it, I will stick to the old school. Thanks so much!

    Thanks so much for sharing this valuable info. I love the idea of small batches rather than lugging out my 'BIG BOY' especially in the heat of summer. Sounds perfect for dealing with garden harvests that come on in small batches. The Instant Pot is on my radar now and added to my wish list, not that I want yet another small appliance but it sounds irresistible : ))

Love my All Americans and Presto but they if I had to go with an electric canner I’d have to do the InstaPot Max as I live in Florida and I can’t see cooking food for longer than needed or at unnecessary high pressure.     Very helpful review of both appliances. I love the honesty and unbiased integrity of your reviews. It’s so helpful to know what to expect and how things perform prior to making an important purchase. Based on your analysis and review of the InstantPot Max, I requested it for my wedding anniversary gift this year. I absolutely love it and have complete confidence using it to can small batches of foods. I only wish it had a larger capacity! I use it weekly and now I couldn’t live without it.     I’m very thankful for this video. I’d like to have the small canner because many times I’m canning something and end up with a little extra that won’t fit in the batch with my stovetop canner. I had almost decided I should get only the small one.... until the video’s end. It would be nice to have the option to can things indoors in the summer without heating up the house. I would need greater capacity to put away my normal size batches for my family. This video is incredibly helpful and appreciated, especially your input concerning the meat sauce. Thank you!

    You make me want to be a scientist! I wonder how I can get started at 75 years old :) I have an All American but I also have a glass top stove so it's not recommended to use them together. I pressure can outside on a propane burner and have to put up with blocking wind, low ambient temperatures, snow, etc. This makes canning a real chore during the 8 months of "winter". So I ordered the Presto electric as soon as I found out about it.

      Glad I could help! But I do have a correction: I hit the wrong button on the Max--Pressure Cook instead of Pressure Can--which explains why the temp was lower than usual. So I can now recommend the Max for pressure canning ground beef!

    Thanks for teaching me so much, I purchased the instant pot max and have been canning chicken and beef, I am I the 600 Elevation range, I had the instant pot set to 2000, and the temp stayed about 247, after reading through questions that I put the elevation to 0. The temp is 248 and bouncing to 250. Happy canner here

    There has to be a better word than "excellent" for me to use here?? The knowledge is priceless, I do hope that the new canners are hanging on every word you say and will follow your science. I've told several about the IP Max but said "wait", she will give more data. Very happy that this IP Max does well, as I only live at 1000 ft elevation. The extra pressure on green beans and squash in the Presto will turn them to mush at my elevation. We appreciate your time in doing this. Great work !!

    Thank you for such a great explanation of both. It helps so much, especially since they cost a lot and I still want to be safe. We have always can the "old" way. Now that there is just two of us we just don't need that much, but some foods just don't taste good from the store as from home.

      We are in that same boat, and I know that I will continue to put up preserved foods using a variety of processes. We like it so much better than store food, and we want to be prepared for emergencies.

    Thanks, Rose , for the testing, comparison and reviews on the 2 electric pressure canners. This information is priceless. I have the Instant Pox Max and I think I will order the Presto Digital canner as well. But it is very important to know limitations of each and use them accordingly. Your hard work will be invaluable in helping me can in the coming years. I agree with your assessment 100% , as to USDA recommendations and their worth. I have heard other issues with this as well. It is best to do your own research , which you have done for many of us!

    I started canning 6 months ago at age 64 retired and enjoying it since I got the Nesco Canner. (Love it) I bought the Presto 23qt but my stove is hard to keep regulated. You have taught me so much, clearly and precisely. I feel safe with your advice. Thank you.

      With your comparison did you find an issue with the quality of food in the presto digital canner? Concerned that it holds the pressure for a much longer time possibly over processing the food. I live in Salt Lake and just purchased the Presto digital. I am planning on canning meals in a jar and was a little concerned about your comment on meat sauce canning with the Presro Digital. I am assuming that at 4200 ft the temp would be high enough to can those type of meals safely. You are the ultimate resource I use for canning, preserving and all food storage instruction and questions. Thank you so much for both of your time and efforts in helping us to be safe in these efforts. Please keep up the information flow.

    Very glad I found you! New Sub. We expanded our gardening this year and my wife was talking about using her Insta-Pot to can. She doesn't have the Insta-Pot Max, so pressure canning is a No Go until we either buy old school or upgrade to the Insta-Pot Max...I too like the customization.

      Thanks for the sub! We appreciate that. I love the Max. The down side is it only does 4 pints at a time. But usually works for us. For me, the safest way to pressure can is with a standard stove top pressure canner, but the Max is second to that. Thanks for your comments.

    The IP Max seems the best choice for me, as I live alone. I keep my All American in the garage, for the times I need a bigger batch, or want to can quart size jars. My water bath equipment is out there, too. I like to put up fruits, jams, mustards, pickled, for holiday gift giving. Plus, the canners in my garage require no electricity. Thanks for sharing your expertise 😃

    First off, love your videos. They are so informative. I was just watching this video and there is a way to advance the presto pressure canner from the warm jar function to the heat function. You may already know this since this video was made a year ago but thought I would let you know in case you didn’t. Just hold down the arrow button for a few seconds once it’s in the warm jar function and it will skip that and go to the heat function.

      You are welcome. Of course, I cannot say that these canners are safe at all elevations or situations. The only think my testing shows is that they are safe at my elevation and I feel safe in using the Max for my family for any food. The Presto failed the test with quarts of thicker meat sauce, so I am more wary of that canner for my family.

      @@RoseRedHomestead I would love to see others conducting similar tests at different elevations. I understand completely why you say that, at elevations greater than 5,000 feet, the devices may fail to reach out maintain the necessary temperature. But is it fairly safe to assume they will work correctly at lower elevations?

    As I said before, I do have the IP Max, and am learning to use it. Was debating about the Presto, but it seems to me that food would lose nutritional value without the ability to adjust for altitude. For now, I'll stick with my Max. Thanks for doing these videos. I have a feeling your students come away from your classes with a sound knowledge because you are such a good teacher.

    I was super happy to find this information. You are an amazing TEACHER! Truly this was beyond the usual "how to" video and your research and data results were compelling. I have been canning for two seasons now and decided to try pressure canning (beef barley soup) for the first time last night in my IP Pro. All was going exceptionally well and I believed all would end well.
    WARNING!!!! Unfortunately, like other times in water bath canning, one of my jars broke!!! OMG - this was not good. This immediately turned my IP into a scene from Yellowstone's "Old Faithful" geyser - spewing heated steam and soup out of the vent - spilling liquid onto my kitchen counter and onto the floor. YIKES!!! Thank God no one was near the IP when it began to erupt! Thankfully there is a built in mechanism to shut the pot down. To be honest, I don't know if there was a warning signal at all - I was on the telephone and distracted right when this happened.
    I have read since that LISTENING in the beginning for a jar "crack" should prevent this from going as far it did. I am curious though - why do jars tend to break? Is it possible because I used those jars for canning before? Should I always use brand new jars for pressure canning especially (in water bath not as serious an issue of course). Is it because I may have put too much food in the jar? ... though in this case all jars were equally filled and only one jar broke (the bottom cracked off completely). It was 45 minutes in when this happened. The temp ranged from 242F - 248F. According to one scientist, my other jars should be fine ie spores, and I intend to keep those. Any advice or others with a similar story. Did you try it again afterwards? I am a little concerned now about using it again. Perhaps doing the canning outside will be one way to ensure safety for all.

    Omg...I am now feeling more competent to try canning...I took a canning course 8 years ago and had gotten away from canning in the last 5 years. I feel like I can now get back to canning thanks to you....and now living in a small apartment I will be using the IP....with confidence thanks to you...I will say it again...you are an amazing teacher!!

      No, I do not recommend using diatomaceous earth at all...ever...in food. It is not recommended by the USDA or by the Utah State University Extension as well as other extension offices. I do use it in my garden for pests.

    I just bought an insta pot max because I have a glass top stove that's not designed for caners and I like the idea of small batches at a time (elevation 614 ft).
    I'm pretty much learning everything from you.
    I did send away for the USDA book for pressure cooking though.
    My mother use to water bath can when I was a kid but I'm hoping to put up foods like beef stew, so that's pressure canning.
    I'll be catching up on a few of your videos before I give it a go though.
    Thanks for all of the videos.
    Without people like you, I believe home canning could become a lost art.

      You can also steam can in place of water bath canning. I have a glass top stove and bought the butane burner for my big old pressure canner. I recommend also finding a non electric option to have on hand for any possible grid down situations. I bought a nice one at a thrift store for $30. I need to have the pressure gauge tested at the county extension office. Know you can buy replacement parts on amazon.

    Truly excellent video and information. I have an IP Duo and do use it with caution for certain foods that will be thoroughly reheated however wanted to upgrade to the Max. I've seen some poor reviews however and so was reluctant. I'm now very certain it's the one for me, especially as I'm at sea level. Thanks 😊. P.S. I heat my jars in the microwave (4 jars 1/4 full of water about 4 minutes until the water boils)

    Thank you, thank you, thank you Miss Pam for doing the scientific comparison for us on both the I Pot Max and the Presto canners!!!!!! I bought the I Pot canner because it is the one that you have used when not using your big canner. I however like the fact that the Presto can can up to 7 quarts and 8 pints at a time. I however do not like the in for a penny in for a pound type 15 pounds of pressure for everything, the having to be there to advance to each step, and the half fill jars with water to sterilize and to warm. I much prefer the ability to just set it and forget it type thing of the I Pot. I never would have thought of the kill zone time difference between the two. I am in Florida where I am below sea level. So the kill zone will go higher for me here than you there on the Colorado Plateau. Again, I want to thank you for ALL your hard work, and ALL your scientific knowledge, and ALL your effort put forth on our behalf. I can not tell you how appreciative I am. I am on disability and have to watch every penny I spend. I have been saving up for a big canner, but have a rental apt that does not have gas only the flat top cooking surface. So, the I Pot Max or the Presto canners would be best for me at this time to start canning and storing food. So, bless you in your efforts to show proper canning instructions and how newer "pots" work for us!!!

      The Presto Digital does 5 quarts and 8 pints, and I have revised the 15 lbs pressure for everything statement after learning more information. We present that in the video coming up this Saturday which also show pressure canning ground beef in both canners.

    Thank you for your great video. I live at 7450 elevation, bought on Presto Electric canner, I was waiting to here your review. I stopped the video and sending the canner back. I guess I’ll have to learn the old fashioned way of canning. I’m 61, on my bucket list to can.

      You are welcome. We are presenting some newly-learned info on how the Presto works in our next video, but even given that, I would not be comfortable using either of these at your elevation. You can learn to pressure can! Just like anything other skill, you will need to learn the process and do a practice run or two, and then wonder why you haven't been doing it all these years. LOL

      I am also 61, and I learned to can at age 60. For many years I was interested but nobody to teach me. Now I have learned through RUclips and love it! Jump in, but just understand the science first!

    I purchased my IP Max when it was first released specifically for its ability to pressure can. I didn’t even wait for it to go on sale. I mean who pays full price for an instant pot nowadays. 😀
    I have a glass top electric stove. Additionally, I did not yet own a conventional pressure canner. I was very let down when I found that IP Max was not approved for pressure canning in USA. My wonderful sister recently gifted me an All American pressure cooker. But I still have a glass top stove 😞 I have been assured by my sister that it will be just fine to pressure can on glass top, but I have yet to convinced myself. So I thank you from the bottom of my heart for your scientific testing. I thank you from the bottom of my heart for you data collection and sharing of that information. I now have the confidence to use my IP Max for canning low acid food.

    I absolutely love this video, it is factual , informative and well planned. The attractiveness of the Presto electric canner is there for me, but I still will divert to the regular stove-top pressure canner for reliability and safety reasons. Am curious though the safety of the machines at higher than 5000 ft. elevation, which doesn't impact me at 1000 ft., still curious! , However I see myself buying a Presto Electric now for the reasons you stated and proved in your videos (Presto and Insta-Pot should gift you product for your well demonstrated videos) . As for sanitizing jars, I will always err on the side of safety and sanitize jars. Well done video ;Thanks for taking the time to make and post ! Again, loved this video, as all your videos.     Thanks for this. I've had that same old Presto for many years. I've been thinking of a second canner, possibly something more auto. I think I'll stick with my old one. Maybe the little I.P. to run when I just want to throw in a few pints that I don't need to babysit 🤔

I don't mind that mine only does 4 pints. If I need to process more, or can quarts, I'll use one of my regular canners. Thank you again for the thorough evaluation of both canners.     Rose, I must say your channel is really a public service. To have someone with your level of expertise teaching on such an important subject is invaluable. I mean, this is literally a matter of life and death. There have been whole families found dead around the dinner table because they ate poorly canned food which had developed Botulism in storage. Eek! Personally, I trust your advice and will follow it closely. I like how you actually teach the process of killing those nasty little germs! Botulinum Toxin is one of the most dangerous substances on earth. But, canning correctly is perfectly safe. Thanks so much!
