Sweet pickled rhubarb - sour, sweet and crunchy

    The easiest rhubarb recipe that exists. At least of those I know. An unusual way to cook rhubarb, and one that can be used for many things. For example, I have used it as sour-sweet accessories for salmon tartare, yogurt, as a side for braised meat, in smaller pieces in a salad or on / in my homemade sorbet or in cakes etc. Only the imagination sets the limit.
    You also get a good rhubarb syrup out of it which you can lighten up with a little water and use as lemonade, or in a rhubarb mojito.

    Rhubarb brings me back my childhood. Always in the garden to pick for pies and crumbles, stewed with cream or custard!
    OR eaten raw with a bag of sugar to dip into to take away its sharp refreshing taste.
    Like the idea of pickling it and looks good with yogurt, a healthy alternative. 🙂👍🌸

    You've gone rhubarb mad Mr Kvalifoods!!! I asked my friends what they recommend doing with rhubarb. Top suggestions were Nigella's rhubarb, yogurt polenta cake (you can find on the net) and this slaw which sounds nice - Rhubarb & fennel slaw. Peel rhubarb, cut into 5 cm "logs." Slice "logs" lengthwise thinly, stack slices to julienne (sp?). Julienne fennel bulb. Toss with rice wine vinegar, ground white pepper, salt, your choice of herbs. Sometimes I like to add chopped dried cranberries. (I think this would go really well with mackerel)

      Yeah, I got two more rhubarb recipes as far as I remember. Then it will be time to switch to asparagus. Perhaps. And the slaw sounds interesting. I will give it a go next time I buy some rhubarbs.

    thinking of preserving strawberry+rhubarb or rhubarb only for the rest of the year. the sour can't be duplicated with lemon. So good with cream; even without the sugar.

      Not that long. It is not a preservation method. More a cooking method.

      Maybe pickled sounds wrong because there's no salt, only sugar in this recipe. Your method is the same as quick pickling, though. Honestly who cares, it looks delicious!

      Here in Norway, sweet rhubarb soup is always served with mackarel.
