    I love how americas test kitchen keeps the old school format and presentation and hasn't caved to the tiktokification of content production. Its a breath of fresh air and very watchable!

      Ugh tik Tok food vids are the worse. They constantly move the camera so it doesn't focus on the food. It's like they don't want you to see how the food looks.

      But they are really pushing the advertising now. In the past, they had great videos and little if any advertising. Also, they used to have great offers to get people to renew their subscription, but the deals they offer now are no better than what they offer first time subscribers. It is my belief that they are having financial problems and they will either be making serious changes to make more money or they will be gone in a couple of years.

    I agree with the steamer update with joinery slats, instead of the bamboo cross binding on the slats. But I don't really want a metal band on them. And if you wash and dry them immediately (I put mine on a sunny counter to dry), then store them stacked until the next use, they don't tend to warp as easily or quickly. This method also keeps mold issues at bay. Love the testing, and am glad to see multicultural kitchen tools being evaluated. Just because something works for now, doesn't mean improvements can't be considered. Thank you for all the work that goes into testing... I make most of my kitchen purchases based on your good efforts!

      I do not want any metal or glue. When the bamboo degrades, which is going to happen, I hack them up and put them into my compost. Once there's metal and glue of who knows what material I cannot do that.
      You don't need to buy brand name steamers. I have always just bought ones sold at the local Asian market. They are much cheaper than $20+ for one.

      Ditto! I've been using bamboo steamers for 35 years and I'm only on my 2nd one. First one was $8 from a grocery store in Honolulu's Chinatown, my current steamer is Helen Chen from my local Asian superstore, less than $20 Two tiers plus lid is the way to go, Joinery slats = yes, steel bands = NO. I use the same perforated parchement liners shown in the video for bao, dumplings, tamales, etc I use fluted parchment air fryer liners for steaming sweet rice, fish, and anything messy. This kitchen tool is worth the cupbboard space!

    I bought the Mila Frozen dumplings. They came with an excellent steamer! I thought the dumplings were the best frozen ones I'd ever tried (unpaid review), but for me the real gem was getting that really nice steamer. I've made some great Chinese buns in it since the dumpling were consumed and gone.

    Not to be a contrarian, but the juvale steamer on Amazon has a 3.7 rating for durability and some reviewers say theirs started falling apart after two or three uses.

      I don’t put much faith in Amazon reviews. Many of the top rated products in a given category are just the cheapest , not the best.

      @@lemonz1769 i know what you mean. Though, i think you might be talking about how Amazon categorizes the results of a search. Yes, many times they try to force you to see their picks. Reading reviews is a bit of an art. The first thing i do on a product page is click "read more reviews," then I sort by most recent. If there are a decent number of reviews (say 300 or more) you can look at the breakdown of star percentages and also what i mentioned in the comment, which is a rating for specific qualities. That was the red flag for this particular item. That was cross-checked with the reviews. I actually wouldn't have commented, but this kind of thing happens with their picks fairly often. I take everything with a grain of salt, and then research as much as i can. I also review stuff and can choose from thousands of items. My research has proven to be pretty effective when comes to choosing items, so I'm not just making things up. ;)

      Dont know where you are located, but if its an option, its probably best to get them at an asian grocery store. Most will probably have them in some shape or form and you can see for yourself how robust they are.

    Lol, nope, I’ll continue to go with the less-expensive type used in my favorite Chinatown dim sum spot (first introduced to me by my ESL student from Hong Kong) - the kind he said warped. It lasted forever … well, until my husband accidentally dropped a moving box filled with books on it.

    Bamboo steamer is ingenious as steam can escape without water dripping onto the food being cooked. However, some steamers are so shallow that one cannot even put a standard dish (with food) in, without touching the lid. I am still very bugged that I can't find any bamboo steamer (or just a lid) for steaming a whole fish. I hope you guys have some solution for steaming whole fish. 🙏

      The Chinese way of doing this is to put the fish on a plate on top of an inverted bowl (or a rack if your wok has one) with whatever aromatics you want flavoring the fish on the plate/in the fish. Add water to the wok so it won't come over the rim of the plate when it is boiling. Bring to a boil, add the plate with the fish, cover the wok with its lid and steam until done (for about 1lb of fish check after 8 minutes).
      Just be sure to have good waterproof oven mitts or some other way of handling the plate.

    Just bought one today. Aldi currently has a 1 tier bamboo steamer for $6.99. It looks exactly like the one he said was the best with the flat wooden slats. Used it today to steam broccoli and zucchini. I love it. 😊

      If the mold has penetrated into the bamboo fiber, it ain't over coming out without physically removing some of the bamboo. Prevention is key.

      Stainless steel generally doesn't rust unless it's abused. If you dry the steamer baskets properly after use and keep them dry between uses, it should be fine.

      Yes, because it can take awhile for bamboo to dry , especially in humid areas. You can't simply dry off the bamboo with a dish towel. If you want to speed drying, put the steamer into a 210-degree oven (be sure to season it with vegetable oil first to prevent warping). Go with the steamers without the metal band, as people have been doing for thousands of years.

    I'm just here to say that every bamboo steamer I have ever tried imparted a flavor to the food that I didn't really like. I think you'd have to use it several times to allow the food tastes to overwhelm the bamboo tastes. Shudder. I could never get there.

      I actually like the aroma. If you want to minimize or even eliminate it, you can use a ceramic, porcelain, meta plate underneath the food. Or just steam in the wok with the plate/bowl elevated on a sturdy bowl, using the wok lid.

    Benn to dozens if dimsum restaurants and never have I seen a bamboo steamer with metal rings. Nor glued bottoms.
    If all-bamboo is good enough for commercial use, I can't imagine it lacking in any way for home use.
    Granted, he does say the slight misalignment affected nothing but the aesthetic, I find their conclusion odd.

    I feel ATK is missing the spirit of bamboo steamer. You dont review it the same way as cast iron dutch oven. Dont create more trash with liners, stainless steel frames etc.. Humans used bamboo in earlier days as it was cheaper easier to manufacture than earthen ware itself. Use all natural bamboo and throw it away after few hundred uses.

    No to metal bands -- it invites rust. Quality bamboo steamers have been traditionally constructed without them. I've had mine for over 20 years. You just have to know what to look for in terms of the type of bamboo and construction. For topics like this, I wish ATK would invite experts with deep and direct experience in the cuisine and equipment vs. what superficially makes sense.

      I agree and his irritation at "not keeping their shape" is a personal opinion and not professional. I would never use one with a metal band for the reason you pointed out. How is the bamboo going to thoroughly dry with a band of metal retaining the moisture? I too wish ATK would invite experts to review products as you mentioned. I do not agree with their assessment at all of the metal band steamers. I have an all bamboo steamer and love mine. You have to know how to take care of them too.

    Oddly enough, I had a higher opinion of bamboo steamers before I watched this essay. Admittedly, it was mostly in my admiration of bamboo itself, as I've only ever used folding metal steamer inserts. Now, other than the layering and the unlikely problem of a curving surface, bamboo steamers seem to be more trouble than I'd imagined. Even so, ATK has provided useful information, even if it was not exactly as intended.

    there is no best chinese bamboo steamers. they all the same. you don't need the steel belt and just bamboo alone will last forever.
