    In Asia, they use a needle brush to quickly poke small holes.
    Cover in salt and leave over night in fridge.
    It is supposed to drive out moisture and let fat under skin baste it too,
    Make the skin even thinner. I haven't tried it yet.

      Yes, that's a good way of doing it. I wanted to show the method without having to wait 24 hours or do prep work to make it crispy. I am a big fan of the Asian way though. Maybe I'll show that method in the future. Thanks for watching!
