I had these on the Rynek Główny (central square) in Kraków this summer when I was visiting with my Polish friend. He recommended them, so I tried and they were 10 times better than expected! I'm glad I can make them again!

The food processor is definitely a quicker option. I don't have the super fine setting on my food processor so I use the box grater. Draining the potatoes avoids excess splatter when potatoes hit oil and makes final product crispier because there is not as much liquid
