If the egg doesn't treated , on the surface of the eggshell there are salmonella and other harmful things. Better use this method to reduce the contamination of the inside. There is only a few minutes cooking time, it is not enough to kill all the "bad" ones.
I crack the egg with one hand, hold the other hand over the container for the whites, empty the egg into that hand, let the whites blop between my fingers into their container, and then toss the separated yolk into the yolk container. Only one hand touches the eggshells through the whole procedure, and broken yolks are exceedingly rare.
Made this for breakfast today.! Delicious 😋. The egg whites over flowed and I didn't use sugar in the eggwhite. Turned out great! Thanks for making this video!!
The reason is because of the chemical reaction between the yolk and the white. If you mix them together you won't get the fluffiness, you will instead get a more brick like material. It's why there's two main types of cakes with eggs, those who are light and fluffy like Angel food cake and those that are much denser and brick like pound cake (termed so for a reason XP). Hope this helps to clarify a little.

To see it advertised, clearly, as "only two ingredients" (which were cocoa and eggs) then to add a huge amount - for me - of a third ingredient (sugar), was a huge disappointment not to mention a con. Maybe I did something wrong when making this, but I followed the instructions as seen on the video. Maybe the heat was either up too high, or I needed a different pan. Regardless, the result was not that great. The chocolate bottom was a little more than done, and the overall taste was still egg. It wasn't sweet. It tasted like egg, but the texture threw me off from eating the egg. Had to scrap this one. Great idea though. Maybe I'll try again another time.
Just watching I had no doubt it would taste like sugary eggs which sound disgusting. I doubt you did anything wrong. It is something that looks cool, but would taste disgusting.

Из 5 яиц, 150г сахара и 130- 160 гмуки( в зависимости от величины яйца)... можно испечь просто вкусный, высокий, красивый бисквит к чаю!
If you move the yolk from one half of the shell to the other after you crack it you will separate the eggs faster and cleaner. You only need two bowls as well so fewer dishes.
