One variety of Banaba/Plantain to be had from Karnataka is RASA BALA HENU (the Kings Banana). One Banana could fill your entire home with sweet aroma. A very rare variety that has to be splut open and scooped with a spoon.

Butter milk is Chash and not lassi, Payasam is a sweet kheer like with Sabu dana, Rasam is the water of the daal and is very light. This food is very light and healthy. Even the food is cooked in coconut oil which is very healthy.

There is almost no dish which is not prepated without fresh coconut in kerala... Even they use 100%coconut oil as a edible oil...
