Gas flame, high heat, small sized wok and super fat chopsticks (so you don't rip the tornado). It's got to be at that point that the egg has formed a solid bottom layer, but is still raw liquid on top─that's when you begin to twist. You want to get it off the heat quickly after you finish twisting, and you want it to twist enough that the egg has wrapped around the outside of the chopsticks. Then you want to slide it out of the side of the wok onto your rice. I know, I know, it's all easier said than done. No one will ever do it properly without trial and error, but is it oh-so-fantastic when you finally get it, and the eggs are fluffy and perfect, and the rice is sticky and amazing. Simple ingredients, incredible technique.
