thanks so much for posting this! I've been making dumpling skins the old fashioned way by taking each piece of dough individually and rolling it out with a small rolling pin. It works but it takes forever. I can use this method to produce many more dumplings with more consistent size, texture, and thickness. ❤

I've made mandu at home using store bought skins and I've had no probs if you buy the right brand, bursting or otherwise. I already find making the filling with kimchi, chopped buchu (the green thingys), ground pork, and glass noodles laborious enough. Making my own skin? Fuhgedaboudit!
My god, the work that they put into this, hot damn and the patience of the staff to stay there and roll that dough over and over again till it gets that thin...These people are amazing! And i really do hope that they use the leftovers of the dough for another dish (which they probably do).

This is an art form. This is why food from other cultures taste so much better. They have more ingredients, many layers of flavors, and are very complex. They take the time to prepare and cook the dish. Here in America we’re looking for a quick and easy way with nothing more than five ingredients in the meal. To me, that’s why many dishes taste so bland. These dumplings look so delicious!

This may seem elementary, but would cutting out the dumpling skins in a hexagonal pattern (like honeycombs) instead of a block pattern (like ice cube trays) lead to less waste and probably more efficient cutting?

Can’t tell you how much I wish I has an electric dough roller - I tried to source one for my mom as it’s not so easy to roll out all the home made fair anymore. I was the one who stepped up to learn all the family recipes, but I can’t even hold a pen for more than a few sentences due to injury and I’m in a chair. (Which wouldn’t be an excuse, except all my pain receptors work) Those things are a couple thousand dollars!!

I'm amazed by the amount of waste dough. When I make them I make sure to place the mold in a way to produce the least waste possible
I don't think they throw leftovers, they probably add it to next patch, but I agree it's more efficient just to cut it the way you mentioned.

To much mixing of dough makes gluten, then you will have chewy tough dumplings lol
And this is why the dumplings are delicious because of the work they'd put in during the making, cutting and cooking process. Everything steps need ultimate patience and diligence to make it work.🥰🥰🥰

Can’t tell you how much I wish I has an electric dough roller - I tried to source one for my mom as it’s not so easy to roll out all the home made fair anymore. I was the one who stepped up to learn all the family recipes, but I can’t even hold a pen for more than a few sentences due to injury and I’m in a chair. (Which wouldn’t be an excuse, except all my pain receptors work)
Those things are a couple thousand dollars!!
you could use a regular hand pasta machine and attach a drill to the crank, I've seen people doing this on youtube

Все традиционно корейские блюда тщательно готовятся по той рецептуре и в той последовательности действий, как это делалось в старину. В этом прелесть этих блюд. Есть современные вспомогательные приборы, типа тестораскат.машинка... и, главное, это умопомрачительно вкусно
