Bishop b5 check provokes a trade off bishops (probably possible to play but I don't know how good it is), bc4 loses the bishop, bd3 blocks the d file and therefor the queens vision (looks playable to me aswell however the bishop is starring into a protected pawn on the kingside), be2 guards the knight and gives a few options for future positions once your knight moves away or is traded. However like you pointed out it's pretty passive. All those moves atleast give you the option to castle in the near future. Could be a matter off taste what you feel like playing xDD I doubt all the other squares are unplayable here. I'm only 1300 so I might have missed some ideas or theory that explains the why xDD

Genuine question. Around 4:50, why would you move the bishop to e2 rather than developing further? I'm still a new player so I don't get it.
