What do you used to make the bunny ears?

It’s Fondant! If you can’t find any at your local store, you can make your very own from marshmallow, corn starch, and powder sugar. There’s so many tutorials on RUclips. I used to make my own fondant before when it was not available for purchase :)

The heavy fondant bunny ears made my candy melts crack while on the cake pop. How to avoid this?

That is very odd! Were your cake balls very cold before you dipped them in the candy melt? Because if they were, the chocolate will crack after it sets. They may seem like they will be okay but after you come back you will see cracks. Otherwise the fondant isn't that heavy to make the chocolate crack
