Always freeze the cake pops for at least an hour before dipping! It helps the cake ball stick to the stick, so your cake ball doesn't fall off! That's the only complaint I have about this video. They look great!

you are so right Candace Richardson! The crystals are really the most goof proof. I would suggest them to the beginners starting out. You want to have fun and not add stress to the mix! Later on, you will probably want to experiment with something else and it won't be so frustrating at that point. this was a great idea! tried melting the way the directions say on the bags, tried youtube videos, this was the one thing that actually worked! just don't use to much coconut oil, I used about 2 tablespoons of it with one bag of wiltons colored candy melts, added a small amount of salt to help with the extreme sweetness and it came out perfect in my opinion and everyone else that helped me with my project! (after much trial and error)
I used to use Canola oil to thin the chocolate out but now I use coconut oil, to me it enhances the taste and can be used with non dipping chocolate as well
Coconut oil works fine for thinning. Use real chocolate, tempering techniques are easy to learn on RUclips in five minutes. Look at the ingredients in those candy melts.

Paramount crystals are great and a nice upgrade from the Crisco I've been using for awhile now. I've been using Wilton Candy Melts cause they are easy to get (Michael's is down the street), but I'm thinking about "upgrading" to something like Merckens. I'll never understand why every batch handles differently. Sometimes I have great batches, some just suck. Everything impacts everything; is it too hot today or just cold enough? Did I cool the melts enough? Are my pops the right temp to dip? Which one is going to be the first to fall off the stick? Agh! I just keep at it and folks haven't complained so far.

I substitute all the time. I use chocolate chips melted slowly add in small amounts of crisco till i get the thinness needed. Dip and set and tgey harden up just fine. You can substitute those candy melts and things that say they are for dipping for regular chips but its easier to buy the candy chip for this yes. Still if you cant find a flavor like personally people love the butterscotch coating which i have trouble finding so i use butterscotch baking chips. And as for coloring simply use the cake gek/paste or powder coloring. Dont use the liquid drops. Tho for a very light color i have you do greatly risk a cracking later on. As for cracking using the chips? I dont have that problem. The crisco helps pervent that.
Question. When I tried paramount crystals my cakepops cracked. I know you said not to use Crisco but honestly I’ve never had an issue with it and all my customers love them.

If the cake pop slides off of the stick you probably added too much frosting to the mix. When there’s too much frosting it makes the cake mix too greasy and you’ll notice that it’s oily when you roll the cake pop balls. The ratio should be 1 tablespoon of frosting for 2 cups of crumbled cake. I hope this helps I learned through trial and error
I live in Australia where candy melts and paramount crystals aren’t readily available so stuck trying with basic white chocolate melts (too thick) so next will try some coconut oil as the vegetable means chocolate doesn’t go as hard. We have copha (vegetable at shortening made from hydrogenated coconut) but that isn’t that healthy and tends to taste oily.
Hi, You can store the cake pops before or after dipping. Undipped - they can last in the refrigerator for 3 days and in the freezer for 2 weeks. Dipped: well wrapped - 2 days room temperature in a cool dry place, 3-4 days in the refrigerator and 2 weeks in the freezer. Make sure to keep refrigerated or frozen cake pops wrapped until they warm up to room temperature so that the cake pops don't condensate. Happy Baking! Colette
How come the sticks look different once she started coating /dipping? Kind of like they had a little base so the cake pop stays on stick no need for the whole submerging in the icing
Janine Seabrooks You dip the stick in the candy coating just before sticking the stick into the ball of cake, it ensures the cake will stay on the stick. She just did it in white candy coating.
The white are probably ones she had already made to use for that step (the dipping process), and the purple ones were to demonstrate the step of inserting the sticks... that's my guess, anyway 🙂
i have used shortening to thin out my candy melts and they hardened just fine.. i didnt even notice a difference when it comes to how long it took.. so im not really sure what is she talking about
if ur a beginner and do not have this same chocolate I recommend essential white chocolate with 1tbs of coconut oil add more if need no more than 2 if u also don’t have any of these food coloring water food coloring will work best for this ,do not shake the cake pop hard it will fall off trust me also don’t spin it and gently tap on ur wrist with the end of cake pop stick get rid of chocolate ,when u cover the cake pop get a spoon and cover it w chocolate make sure u when u pick it up it w a fork Bc its gonna feel heavy so u need to take out chocolate to get the cleanest cover then when have it straight tilt it a bit and the extra chocolate will drip 😊

Paramount crystals IS shortening. They are the same ingredients just one is shaved (crystals). It’s just a fancy, more expensive shortening.

don't let anyone tell you you can't use real chocolate. that's literally all I use. just add some oil to them and let the chocolate cool
