I usually add a weight to my sauerkraut so that the juice goes above and no mould gets in
when you add salt. It is not healthy for people with high blood pressure. how can they eat fermented foods without salt
U are sooooooooooooooright I have been looking for low sodium kimchee and sauerkraut and I haven't found one yet and miso is very high in sodium.

but are fermented foods same as processed foods? cause I heard procced foods are not healthy to eat
No, the bacteria is doing a natural, ancient version of processing the product. In the end the nutrients in the veggies are more easily available for your body and you strengthen your gut at the same time
