      I too, grew up on sauerkraut and made it ourselves with cabbage we grew. My parents lived to 91 yrs. I still love sauerkraut, but always make sure the cabbage his not Green Iant as it comes now from China. But I make mine with all kinds of organic cabbage and radishes. I eat it everyday.

      @@cactusladysouth1000 there is only one way to make sauerkraut (fermenting cabbage with a little salt, thats it). The difference is made by the spices. The traditional standart are caraway seeds and black pepper.

    after researching all fermentation ...cassave mashed african style...fermented for umpteen time...has the most diverse bacteria !!

    In indian cutlures ; veggies are fermented with loads of herbs and spices. We call those achaar. In our culture, depending on the season achars are made and consumed. From green chillies, garlic, ginger to raw mangoes, anything one can imagine. An Indian house have at least 4-5 types of achaar in their kitchen that's eaten in small quantity with meals.

    I'm a German Hungarian want to try something really good? Try this. This is for one serving so adjust as necessary. Take half of a large onion and diced to small pieces. Saute in 3 to 4 table spoons of extra virgin olive oil. When onions become slightly soft, add a piece of smoked sausage that is sliced up saute until the onions and the sausage are slightly browned. Remove from Heat and add 1 1/2 cups of raw organic sauerkraut. Add 2 tbsp of bright red paprika, and 1 tsp of smoked paprika return to heat for just a few moments to stir ingredients together just a heated up don't leave it on for too long not more than a minute or two otherwise you kill the bacteria. Enjoy with a good piece of German rye bread!

    I eat almost every day bio not pasteurised sauerkraut here in Switzerland 🇨🇭never had any issues with my bowel it’s the best for your stomach and the Vitamine C amount is also very high !

    I find that adding EVOO (extra virgin olive oil) at the table to my sauerkraut and kimchee makes it taste less sour and salty. I am making sauerkraut now and like to add fennel and raw beets to the cabbage.

      I’ve been adding fennel, too. So good! Sometimes I add a smidge of chopped ginger. And garlic, always.

    And me as a german can say that the sauerkraut, for me, can't be too sour 😋
    I also like the bitterness of greens very much..... as dandelion fresh from the garden in a salad👌🏼

    I was sensitive to smells as a kid so this one scared me as well as canned sardines lol, but maybe now I can appreciate it as an adult and give it another try

      The way I got into kimchi was making it myself. I became biased because it was homemade and that's how I started getting used to the taste and texture.

      @@HisHumbleHoliness I cut and chop and take on an empty stomach with just enough water to get it down nicely. It will kill any cold I have had and using garlic in 5 hours or so. Need to repeat at least 2 x day for at least 3 days. I cook with garlic a great deal also

    I prefer kimchi over sauerkraut. It has much more flavor and a kick. It just tastes better to me. I used to have itchy skin problem grown up and a friend recommended I try it. My itchy skin problem went away and never came back.

    I love Sauerkraut, I often make it myself. The only problem is it affects my arthritis negatively. So much so I have had to give up all fermented foods. Fermented foods also include pickles and olives, even canned tomatoes.

    Just been to Philippines...pharmacies everywhere!!! Asked a worker, what they sell the most...blood pressure/diabetes medication. Looking at their food...rice 3 times a day which converts to sugar...plus a lot of other products with added sugar.
    STAY OFF THE SUGAR.

    I swear by my natural whole food prebiotic. I think you need both. I eat a medium red potato with olive oil or ghee, fresh steamed kale with raw kraut or kimchi 😊 keeps me regular, not bloated, sustainable energy

    In Croatia we eat domestic sauer kraut from September to May. It’s basically our National food. 😎 Crispy & sauer! We akso eat it as a stew with beans.

      Well, red beans (kidney) are the most used for that, but you can use whatefer beans you like (white, mungo…).

    as a Hungarian we ferment everything, but most common is the cucumber in the big 10l jars, all you need is dill, bread or potato, vinegar and salt and a few days of good hot summer days. That shit will cure your gut in no time, stuffed with vitamins as well and low on calories if you want to diet or loose weight.

    Sauerkraut and fermented hot peppers are delicious. I marinate carrots and turn them into hot dogs and top with my fermented peppers and sauerkraut for yrs.

      I do a 1000 grams of cabbage and 20 grams salt, if cabbage isn't fresh it might not produce enough juice so do a cup of boiling water add like 5 gram salt to it and wait to cool down properly and add to sauerkraut it works well for me

    I usually eat kimchi 😋, it is some to sour but what I do is I put high quality olive oil on top and Balsamic glaze drizzle. Yum.

    My mom made hot dogs & Kraut from time to time when I was a kid and I never liked it and she probably made me & my siblings eat it because it (the Kraut) was good for us. I am 65 and never had Kraut as an adult, maybe I'll try it again LOL.

    It's good to know that "fresh" sauerkraut/kimchi is as good as the one in a jar. I thought only the live bacteria that make into your gut is useful. From what I understand from the video, according to the doctor, live or dead bacteria are all good for the microbiome. Right?

    When he states that if you have not eaten fermented foods before, start slowly. Or, he says, it can change the frequency of your bowel movement. I have to ask when he says frequency, does that mean the amount of time in between bowel movements, or the sound volume. Lol. I'm thinking, probably both.

      @@kallachnadra Salt and cabbage are only ingredients. Use salt to wilt the cabbage for two hours then press into a jar. Let ferment for two weeks, then move to the refrigerator and eat to your heart’s content!

    Thanks a lot for your beneficial information! I adopted your lectins free diet and I love my new way of eating. I have two questions. I buy sauerkraut from the store. Sometimes I simmer it with onions and olive oil. It tasted delicious! Am I killing its benefits? Plus, I tried to ferment cabbage with water and salt and after a few days it smelled like ammonia or something like that. I threw it away. Did I have to throw it away?

      You don’t need to heat sauerkraut because you kill the bacteria. Cabbage shredded, salt, if water to cover vegetables and put the bottom of the cabbage to push vegetables inside . Please subscribe to my you tube channel under my name dr samiera Sadoon al Hassani and see my video sauerkraut, how to make it , principles. It is our Babylonian culture and do fermented foods, vinegars. Very easy . Go for it.

      1 red wine per day is a staple of Italian centenarians. Other alcohol is just toxicity with no benefits. Not just the alcohol, but the grains are inflammatory... double whammy

      Probably. I’ve been doing my own research and beer/alcohol absolutely kill the good bacteria. Not sure about red wine but probably too much of that too is bad.

    I heard if combining with broccoli and/or kale in a smoothie you lose some nutrient from the broccoli/kale. Haw far apart in time shod I wait before consuming one or the other ?

    I'm a Korean man. My mother is 90 years old and lives alone with no health issues. Although Kimchi is considered a superfood, my wife, son, and daughter do not like fermented Kimchi due to its sour taste. As a result, most teenagers and the younger generation do not eat Kimchi these days.
    I love to eat deeply fermented Kimchi made with cabbage, red pepper, and garlic.
    Another favorite of mine is Yeolmu-kimchi, or young summer radish kimchi. Although yeolmu (young summer radish) has a small and thin taproot that isn't very useful, its thick and abundant green leaves are commonly used throughout spring and summer to make yeolmu-kimchi. It has lots of juice, so I eat it as cold soup almost every day.

    First time watching. The Charisma and Feeling from this guy feels sad and unbelievable. I Love sauerkraut and Kimchi and Eat it Everyday but I don't feel the Sincerity here. He is not the Healthy Food Messenger for me !

    I’ve been giving my 98 year old father homemade sauerkraut with garlic, every evening with his salad for the past 2 months. He loves it! I didn’t know about starting slow. Oops…But no ill effects at all.

      It kills the bacteria. You don't want to heat any fermented foods

      i try to toss it straight into my stomach by swallowing ....i.e without chewing. but im a weird old guy.🤭 you can try mixing it with redpepper hummus and see if that helps

      It has to be chilled. Just cabbage and salt. No vinegar as that wasn't fermented cabbage.

      Buy sauerkraut from the refrigerated section. It should state on the label that it has live cultures.
