I just did asparagus last year for the first time, when I was all done a video popped up saying that you "should" put your spears in upside down so when you get them out you don't tear the tips off. I might try it next time if I remember. Great video! They look beautiful!
I had a jar break when I was making hot pepper Jam, WHAT A MESS! 😅 You had a very informative and educational video! A lot of individuals may not know about using a pressure canner for low acid foods.

Since, I do not have a pressure cooker, I usually don’t watch the videos on it, yet.. I do love asparagus but have never grown..I was wondering if you could vacuum seal, then freeze them, instead? I already do this for the green beans and greens, I grow..thank you for sharing.

Yup, just call me Joe, I suppose. I had heard whisperings of RUclips targeting people with the word prepper in their handles, but I didn't think much of it. That was quite a while back. But I guess there was something to the rumor. I tried other handles with "prepper" in it and nothing would work until I took "prepper" out of the equation. I tried to think of the most benign name possible and came up with Average Joe Smiling. Whatever. Like I said . . . crazy times.
I guess I don't know if they're doing that, though for a different set of reasons I'm probably going to change my channel name in the near future. Mostly because it's expanded quite a bit beyond "prepping", and the name doesn't feel like it fits super great anymore.

Hi There from the other side of the river, we usually pickle ours to keep it crisp (i think you have a video for pickling asparagus too). Does the pressure canning make the asparagus mushy? thanks for your videos, you do a good job :)
Ah, what a bummer. That kind of rack is not very stable. My jars always fall over in my wated bath canner with that kind of rack. Jt makes me nuts. But water bath isn't as radical as pressure canners.
It comes with my type of pressure canner. They might make replacement ones you can get, but I don't know if they can be universally used across different brands/models of pressure canner.
Just asking....from another video of yours...CARROTS...is the end result like 'canned potatoes' or do carrots keep their shape and texture? Going to do my first 'pressure canning' carrots later today...or tomorrow.
Home-canning vegetables will get you a result that is pretty similar to the same type of canned vegetable from the store. Except it doesn't taste like a metal can. This includes carrots. They still have their shape, but they will be soft like cooked carrots (because they are essentially cooked carrots).

I'm wondering why you don't seem able to do cold/raw pack with asparagus, like you can with most other veggies?
The way I did it here is technically cold pack. Hot pack would be if I cooked it all first separately, before putting the asparagus into the jars.
