As far as chopping onions, if you watch Gordon Ramsay's RUclips video about how to chop an onion he shows a way that is super fast and easy. I've used that method and it is the easiest ever. :)
You clearly know how to dice an onion bur I know I love shortcuts. :)

Best thing about cooking over baking you can modify ! Baking is very accurate but baking you can fix to taste like hell no to all that onion and I’d very much “dice” them smaller lol
