As a kid, my Mom would put cucumbers in vinegar and refrigerate. She let us have it as a crunchy snack. I don't even think she knew all the benefits of this fruit. I'll pick up a few later along with some apple cider vinegar. 🦋

I love cucumbers: American, English, Japanese, Persian, Chinese. These are the ones I know of. Each one tastes different and has a different texture. I eat the skin & the seeds. They are all hydrating. I eat them in a regular , tuna , egg, macaroni, or cucumber, onion ( with or without tomato) salads. I also slice them & eat them as a snack. You can cut it the long way, take the seeds out and stuff it with any of salads above . This is great, especially on a hot summer day or any day you don't want to cook or heat up the house! Of course, you can eat them the old-fashioned way, pickle them. Please make mine Dill pickles, please, because only dill will do!

Years ago when I suffered badly with Chronic Fatigue I ate cucumbers and tomatoes at every meal. I am sure it was one of several foods that helped me recover from it. Doctor Gundry, has said many times in his videos, to avoid eating the skin and seeds of cucumbers due to their lectin content. I use to always buy cucumbers, but since I skin and seed it , there is not a lot left to eat. Then I also wondered about the white line down the cucumber, and when i ask Google, it said that it is the mosaic virus. So now I don't buy any.
