So is the yeast from the bread?
I know they say it's wild and all around us, but I don't understand the point of adding the bread, Is it just to impart flavour?

I was gonna say, wouldn't that be kvass, and sure enough. It isn't really "beer" as such, but a fine beverage for what it is. Closer to tibicos or tepache.
