      I'm sure you will love it! When I made it with wort for the first time, it was a huge OMG moment. I haven't tasted kvass like that in over 30 years. They don't have the old kvass in Ukraine anymore, idk about Russia. Even bread, Ukraine was famous for, is gone 😔. Give me a call when you are in town. We'll get together ❤️🍺🍺

    Can you combine sugar and diastatic malt powder in both stages of kvass making? Or does it have to be only one?

      Yes, you can. Just use smaller amounts of each.

    Thanks for the recipe! Did you ever find store bought kvass that tastes the same as homemade one?

      You are welcome. No, I have never found a store bought that would taste the same. I had material prepared to highlight why the store bought is different, but I decided to drop it. The store bought kvass is made with ingredients that mimic the real kvass but have no nutritional value. Real kvass doesn't have a long shelf life because it is a very much alive drink. When I was testing how much sugar and diastatic malt was safe to use and how long it could last, I had few volcanic eruptions... One time, it even blew off top of the bottle. Store bought kvass is artificially carbonated, and homemade kvass builds up carbonation due its to bacteria and enzymes.
