Easy 2 Ingredient Ube Waffle! Make a Waffle Using ICE CREAM | Ube Edition

Quarantine brings out the craziest fun ideas when it comes to finding hacks to make your favorite Asian snacks. Today's muse is Ube Ice Cream that was restocked at my local Trader Joe's!
Then I wondered..."Hmm, could I make a ube flavored waffle from this ice cream?" I mean, ice cream has a majority of the ingredients one would find in a waffle anyways: milk, eggs, sugar, flavoring...
So I decided to test my theory and I am surprised it worked. Definitely could have used more ube flavoring. I also didn't want to waste an entire pint of ice cream in case it failed, so I halved the recipe to output just one waffle.
Here are the specific ingredients I used:
- half a pint of ube ice cream (Left out to melt vs. microwaving. Did not take long at all)
- 3/4 cup self-rising flour (Didn't have this, so I subbed with 1/2 cup flour + 1/2 tsp baking soda)

Nice experiment. Being lazy, I'll probably just put ube ice cream and coconut whip cream on a regular waffle. Looks like a delicious combination. Thanks for the idea.
