You can eat egg yolks raw. It’s perfectly safe. The salmonella lives on the shell of the egg. So long as you take steps to not cross contaminate, you’ll be fine. I personally like to crack it into a bowl, wash my hands thoroughly and then use my hands to separate the yolk from the white.

You can just straight up use salt. Separate your yolks and whites, gently place the yolks on the salt, VERY GENTLY cover the yolks with the salt and cure for about the same amount of time. They're like little yellow bricks of cheese you can grate over stuff for a cheesey, eggy kick to any dish.

Kimchi is terrific with steak. What's really good though is to slice the kimchi into a sort of thin slaw and put it on Angus beef sliders using Hawaiian rolls as buns

This means that if you ate two raw eggs every day you could expect to catch Salmonella once every ... 27 years and some change. That's a small risk. Negligible really. Even if you're unlucky and do catch it as long as you're a healthy adult the vast vast majority of cases pass within a day or two and present as food poisoning symptoms. Unpleasant? Yea. Is it a real threat of harm? Nope. So really. You'll be fine. Raw egg yolk prepared like this is delicious. If you don't want to run even that small of a risk you can also just get pasteurized eggs which eliminates the risk. The taste is a bit different but not by much.
