A cheating step I did was add garlic ginger red and yellow onions in the food processor to make a paste cook it for a bit then add my oil It saves a lot of time on the onions

As someone said below, there really is no recipe, you just have to eyeball it. I have a standard Le Creuset Dutch oven and I would fill it about half full of diced onions and maybe about 2lbs of chuck roast.

I had this once in Ethiopian restaurant ( didn't like it 😕 ) think because it was cold. barely warm. Also thought it would be spicy ...it wasn't. Still going to give this a try. Looks exactly like what I had. ? ..if you don't have spiced butter what can you use ; also how long did you cook stew for. Could I make in slow cooker?? U can’t slow cook it as the onions have to fry and brown to caramelize. That sweetness of the onions is what makes the dish spectacular, can’t take short cuts on that step. It’s stirring every 2-3 minutes for a hour with the onions as a must.
@@Jiulize let me clarify. Doro wot, siga wot, and many other dishes have 1 thing in common, the preparation and seasoning. The prep and cook of the onions along with berbere is the dish. You throw protein in after, any kind. Berbere isn't spicy hot, it spicy aromatic. Don't be shy it takes more than you would think with the long cook time. One of my favorite dishes to introduce people to West African cuisine as it is amazing.

It's ghee but we add our own spices to it to make our traditional butter. You use ghee instead or skip it all together.
