Because you can have crops year round. When these farms were first created Arizona didn't have the population that we do now. Also, people don't realize the sheer size of the agricultural area that extends into the imperial valley in Southern California. When these farms were created the country had under 150 million people in it and we had enough water. Now farmer's feed a nation of 350 million.
@@whosyourdaddy5719 I hate to disagree with you but as long as we have water it is a perfect place to grow crops. Additionally there are some crops that grow better in a warmer climate. Also understand that most of the year the weather around here is fine you can walk around with short sleeves. It's only a few months in the summer that it is outrageously hot. And you can't grow most crops then. We have a wide variety: lettuce, watermelon, cantaloupes, citrus, cotton and so forth. Unfortunately we are in the middle of a very long-term drought throughout the western states. Therefore the snow packs aren't contributing so efficiently to the rivers that flow into into the state. I know it's counterintuitive but it really is a great place to grow massive amounts of crops.
