    Josephine, I made this sponge cake n it tasted very yummy.Thank you so much. Your method is easier than than one other tt I've tried.However, if I may suggest, letting the cake pan sit on a metal rack n then let it b in the water bath reduces the wetness at the bottom of the cake.I was happier with tt outcome💝💝💝

    Ingredients
    (A)
    • 35g, 5 tbsp melted butter or corn oil
    • a pinch of sea salt
    • 33g, 3 tbsp whole milk
    • 20g, 2 tbsp sugar
    • 55g, 6 tbsp cake flour
    • 3 egg yolks, cold
    (B)
    • 3 egg whites, cold
    • 1/4 tsp cream of tartar, lime or lemon juice
    • 45g, 5 tbsp sugar
    Loaf pan: 150c, 50 mins
    Muffin pan: 120c, 23 mins

      Ka Huen, I didn’t use the water bath technique. Still the cupcakes turned out perfectly.

    Hi, thank you for sharing. Quick question : I did one of your fluffy cake recipes, I did not have handy cake flour, so reading around internet found I the recipe about home made cake flour. So I added corn starch like instructed, flavor was great but did not grow almost nothing. Reading flour package I used, has only 4 % protein, do you think the fail was there? Can you advice about how to make cake flour? Thank you.

      I tried it both ways(with and without water bath) and I would say you should do it with water bath, and bake for 18-20min instead of 45min. The one w/o the water bith is a bit on the dry side and it had small cracks. However, either ways taste good.

      @@Diorchestra93 For cupcakes, it's 23 minutes as mentioned in the captions. Not 45 minutes.

    Could you please clarify this step: Once cooked, leave to cool 10 minutes until the oven temperature reached (reaches?) 50ºC? Do you mean to turn off the oven and leave the entire cake in the oven ten minutes until the oven temperature drops to 50C? Thank you.

    Oh, Josephine, I missed out the step of grinding my sugar into powdered sugar so as to achieve a finer texture of the cake.Hope this extra step helps someone😂😂😂😂

    love your vid. i followed exactly. came to exactly 12 cupcakes. i used a lasagna dish for my water bath. preheated the oven & water bath dish 120C and baked the cupcakes for 23 MIN. but my cupcakes came out pale, not completely cooked and wet at the bottom. so i extended the baking time to 30 MIN until the top of cupcakes browned and cake bounced when touched. what did i do wrong? could it be because my oven dish for the water bath is too deep? should i maybe raise the temp to 180C and bake for 20 MIN?

      no leaveners. i just bought it labelled as "cake flour" from an asian shop. i'm thinking it might have to do with either my oven temperature or the amount of water in my water bath?

      elvenQ wow i didn't expect a response 😊, but yeah i might've had something to do with the oven temp. i heard it's best to use a higher rack placement to avoid cracking of the cuppies.
      was is any good though? i wanna try it out rn

    I have tried it twice but not successful. The cake crack on TOP and the bottom of cake is wet. Think because of that the cake actually collapsed in the Center. May I know what went wrong?

      Naoki Hikari I'm pretty sure white vinegar would be a great substitution since the cream of tar tar is used to help stabilize the egg whites

      @Naoki Hikari, If you don't have cream of tartar, you can substitute 1/2 tsp of lemon. lime juice or white vinegar instead.
