5:17 I wouldn't say you're really going to mess up your knife, unless you mean aesthetically. By rounding off the shoulder you will actually increase cutting ability. You'll notice the blade will glide through material a bit easier. I think it's better to go too low and miss the apex completely, than it is to go to high and convex the apex or make it 5 degrees more obtuse than you wanted it to be. It's probably best for beginners to frequently flip the knife over and observe exactly where they're removing material (some use the sharpie method). It can be tempting for them to just keep sharpening because they may feel they finally have their angle locked in and are afraid that if they move it they'll never get it perfect again. But to me that is good practice. They'll have to develop the skill of re-finding that angle repeatedly. Good luck with your channel, I like it.
I’d have to agree, having a lower angle is much less problematic than a high angle. I also agree that it’s a good idea to frequently check the edge to see what’s going on. Thanks for the info and comment!
I need a video to help me use my knife, because it is so sharp.. !! I have no problem getting my blades "hair whittling sharp"... The problem I have, is actually using my pocket knife, because I will blunt the perfect edge,,,
, so,, I've taken to carrying a "beater knife", ie, a SAK, so I don't have to use my sharp knife,,,
Maybe I need some kind of therapy, ??
Or study the art of wabi sabi... ???

Trouble is, I've got the Victorinox alox Bantam so screaming sharp, I'm reluctant to use that as well,, 🤣😱,,, maybe I need to carry 3 knives,,??,, 🤣🤣🤣
