SNS Kettle! Crispy Chicken Thighs! Seasoned 3 Ways. Uncle Steve’s! Aw Shucks Corn Spice! Red Hot!

  • My best way to cook crispy skin chicken thighs indirectly on the Slow ‘N Sear Kettle.
    • Started with 4 pounds of Bell and Evans Chicken Thighs.
    • Seasoned 3 with Uncle Steve’s Gator Shake, 3 with Aw Shucks Corn Seasoning and 3 did nothing because they would get Red Hot at the end.
    • Set up the SNS Kettle to cook with the Slow ‘N Sear 2.0. Used a full chimney of charcoal and left the vents wide open.
    • Put the thighs on the grill on the indirect side skin up for 15 minutes.
    • Flipped them to skin side down for 10 minutes.
    • Flipped them back to skin side up for 10 minutes. Added some Red Hot to the 3 and cooked for 5 more minutes.
    • Removed them and dusted the sets of three with the same shake.
    Summary: The thighs turned out fantastic and cooking at high temps really made the skin nice and crispy. This was the first time having Uncle Steve’s Gator Shake and it was great! The Aw Shucks Corn Seasoning we used was very good as well! Red Hot is my go to quick sauce for a lot of foods and great on the thighs.
    I would make these exactly the same way again. Start with quality chicken and use a good spice!

    Very nice cook! Looked great and that skin was spot on! I’ve never tried uncle Steve’s, I always use sucklebusters, but I think I might wanna give them a shot! 💯🔥🔥 great job.

    What temp did you cook to? I thought you want chicken to be 165? Is there any carryover when you let sit?

      Correct, 165 is the minimum, but since the thigh is nice and fatty, I like to take them further because they still stay nice and juicy. If I would cook a breast, I would pull right before 165 because it will get some carryover. Thanks for watching! Cheers!

      Metlupass2 I would say yes, as soon as I ordered my performer, I ordered the SNS. I have since gave my performer to my future son-in-law. The SNS Kettle makes this even easier to use with the improvements they have made on the kettle! Cheers!

      Metlupass2 Full disclosure, we are an affiliate with SNS, but I will give you my honest opinion. The performer was a great grill and the side table and cart was nice, but it was a larger footprint. The SNS made some really nice improvements, with the smoke hole that can be used for an automatic temp device. The hole for the probes and the extra holes for the ash sweep. the side table is perfect for what I need as I have other grills and tables that I can use on my patio. I like how compact this is, again, because I have multiple grills on my patio. The smoke hole is one of my favorite parts since that is the only intake needed for a long slow cook. Hope that helps! You can’t go wrong with either, just depends on what you are looking for.
