    I've used the slow and sear a few times for chicken but I definitely like the vortex a little more for a better skin. Hey also bro I would suggest on the slow and sear not putting water in it for the chicken cook. I've found that using it without water also gives you a better skin because of the increased temp and less humidity in the cooking area. Give it a try and see how that works out for you.       Thanks man... I totally agree with the vortex and the skin. I was trying it out and see what it would do and now that I see how it works I think I might like the Vortex better as well be cause it has a smaller footprint and I can cook more on it at once. Thanks for watching and commenting.

    Whoop whoop. I do chicken thigh Sundays on the smoker / bbq. Perfect versatile cuisine.... also because of you today I’m doing for the first time skin less , bone less thighs and comparing them against bone in. 🤞

    I love my slow n sear. Never run it with water when cooking chicken. Put some wood chunks in the coals and it only gets better.

      So far so good with mine as well. I've only used it a few times though. I added a chunk with the vortex and I'll add some on future cooks.

    That’s why a kettle can’t hold a candle to a kamado grill. That BGE is even cooking across the whole grate and no need for a water pan as the ceramic holds moisture.

      The water wasn't added to add moisture it was added to help reduce the temps. The water acts as a heat sink and won't let the grill get as hot. And as someone who has a XL BGE it's not even cooking across the grate. With the diverter plate there are hot and cool spots all around the grate.

    As much as I love my Slow n Sear, I have really liked using the vortex a little bit more because I feel like the vortex gives me more indirect space.

    Chicken looked great bro! I use my SnS a lot when I do chicken on the Weber! I like grilled chicken over charcoal, gives it a great flavor!!

    I still haven't decided if I'll get the slow and sear. For years I just bank the coals on the one side and cook on the other. Works great. I mostly do thighs,yours looked great. Giving them a sear at the end looked great. 👍

      Yeah banking works and is much cheaper. Also You might want to look into getting a paver stone that you can use to help hold back the charcoal.

      @@SDSBBQs good idea. However and I should have mentioned this but I always use one of by baskets to contain the brickets. But a brick or paving stone would help deflect some of the heat away from the leading edge of the chicken. I have been thinking for a long time to getting the larger ( I currently have the 22" ) kettle just to have some more room to work with. Thanks for the suggestion.

      @@SDSBBQs I have to get to work but considering that you have a slow and sear I don't think you need a basket. I'm talking about the two baskets that come with the upper level webber's. Nothing special but yea, there's always something new you want to get for the toys. I ordered a 22" WSM last Friday. It should arrive by Monday or Tuesday. I checked out the after market items and oh yea,daddy needs to accessorize. Bling Bling.😁

    Hey Dash! I love thighs and cook them with my Slow N Sear. I leave the grill wide open and cook skin side up for the majority of the cook and get the skin nice and crispy. Looked like you did great with them. I cook breasts for my wife, she does not like the thighs. LOL

    I believe cooks over 325degrees nix the water. Also I do believe you fill vortex up it will almost melt the grate and produce nice Crispy chicken. Looking Good Dash.

      LOL... I agree it really does COOK The hell out of the grate using the vortex. But they sell replacements if needed. LOL!

      @@SDSBBQs you need gourmet systems grate you can smelt steal if your get your vortex on. Im getting new toy today, check em out the tip top temperature controller 37.95 set it on vent close bottom vent dial her in.

    Great video! I just recently used my SnS for making some chicken legs came out delicious. I prefer to use the vortex to make chicken wings gives them a nice crispy skin.

      So It was suggested to me to take the water out of the SnS and see if the skin crisp gets the same way as the vortex... It will be on the things to try soon list. Thanks for watching and commenting!

    Hey Dash shy not use some wood chunks on the coals. I bet post oak would be the bomb with the chicken thighs and the jerk seasonings.

      No real need to be honest. The Lump does provide a decent smoke flavor. I also don't have post oak in my area. Maybe next time I'll cut up some of my Oak splits into chunks and throw a few on.

    When the chicken thighs went on the sear side, all I could think of was "now that's a fire!" If you used the Vortex, would you have been able to put more thighs if need be?

    Question: It looked like you dumped the coals when only about half of them were lit...is that how you always do it? Am I getting mine go too long waiting for fire to shoot out of the top of the chimney starter?

      I did that more for the video. I wanted to progress the cook. If I was doing something else and it distracted me longer I might have let the coals burn longer but I was just being impatient. I really don't think it will make all that much difference.

      True... one of the things I was thinking about afterwards is that the Vortex allows for more food to be cooked at the same time.

      SDSBBQ s&s I say is a 40/60 when the vortex ur loosing about 5 inches from center so say 15/75 looking like the vortex is the better option..I think the s&s is going to be the perfect tool when u just wanna smoke something small for the family

    Be careful with those wire bristles I got one caught in my stomach.

      So the one brush I used has a spiral coil and none of the bristles the other has bristles that are spun on to the handle and not stuck in like a toothbrush. I am more than aware of those brushes that loose bristles and don't use them. Thanks for the heads up though.
