Can it backup user data when it have bad health chips and put in new one with save data or only works like copying matches data serials ?
You cannot get data from it.
Only for copying configuration data for UFS replacement with no data
Is there any way to check the health of NAND on iPhone with a program or if NAND gets damaged how can ı understand because my panic file leads to NAND issue on panic analyzer but phone works perfect for days without restarting.

Jcid u15 with very limited functions compare to easyjtag. Without support forum and social network. Compare easyjtag have wide range of users all around world. But for future if they make it better maybe i conside to buy. must be innovative changes.
