I watched the whole video at just over 21 minutes…and it was totally worth it! The dogs and burgers are great! I loved the quick hands involved during the preparation of the shrimp.
Those patties was like butter. They just flattened out with ease!! I should’ve pursued my career in food. It’s a good feeling knowing that you’re satisfying people you don’t know with delicious food
For anything over $2.29 I expect more than 1/6 pound baby d*** burgers. $5 for a sliced fried potato covered with generic cheese? I can get 5 pounds for $1.75.
I used to live in southern Wisconsin and work on a farm. On Friday night I would drive to Chicago to sell at the Wicker Park farmer's market the following morning, and every Friday night, I would come to Red Hot Ranch for 2 Chicago dogs and some cheese fries. It was a tradition, ritual really.

Born & raised in Chicago and from mid 70's. So many spots did this style of cheeseburgers. Sky high rent, gentrification just drove out these small spots.
The close up shot of the food is the money shot. When the food is filmed that close, thats when I feel like I am the one whos eating the food. Just makes me so hungry I can eat 5 of those smashed burgers right now.

Places Like this will always have a special place in my heart. My single mom would leave us a 20 bill for 3-4 kids and call the local burger joint or pizza place that we are going to pick up food. If we where short the manager would cover us. Miss that time in chicago

“No music or narration just the sounds of the kitchen”. I shot a video of the 4 guys making pizzas in N. Philly restaurant last summer visiting from Seattle. They made 40 pies in the 10 minutes we were waiting for our order…the kitchen show was worth it!
when ground meat is packaged, the meat on the outside is exposed to more oxygen. That's why meat turns a bright red color on the outside while the inside remains brown. When myoglobin is mixed with oxygen it becomes oxymyoghobin, or more commonly knon as "blooming". If the meat on the outside looks brown or grayish brown it is starting to spoil.
I make these once a week for the family. Blackstone is being put to great use. Kids prefer my smash burgers over going to a fast food chain. I’ll have to agree with them on that as well
What makes you destroy the juicy burger by smashing the meat? Do your kids walk away if you're not finished in 2 minutes? Are your children too dumb to understand what good ingredients are, the correct treatment for meat on the grill is? Teach them good grilling and not shitty cheap fast food crap for fat morons. Smash burgers were the original way that hamburgers were made prior to all the fast food stuff and frozen patties etc. I grew up in the 50's and there was no fast foods that I remember?? BTW, large all the way burgers were 6 for a dollar $1.00. Large watermelons were also 6 for a dollar and gasoline was, on the average about .18 cents per gallon.

I'd like to know how they get to film in restaurant kitchens. I was trying to photograph diner kitchens, just for my own use, most said no so I have up. Planned on making prints to hang in my home kitchen

I have a Blackstone Griddle and I love making Smash burgers but I never actually weigh them. So some are small and some are really large. I guess if I actually took the time to weigh them they would be more consistant. I have two Blackstone hamburger presses, one was the older model with a circular lip that limits the thickness, and then I have the newer one that is just flat. Your burgers really do look delicious, but since I live in the Denver Metro area I will have to make my own.

Like I said above I have both of the Blackstone hamburger presses the old and the new one. The new one is completly flat where as the old one has a 3/8 of an inch lip around the outer edge. The old one makes more consistant thickness burgers.
I weigh mine out to 2 1/2 oz. 2 oz. would be great too. 5 oz. for a double smash (2-2 1/2) works for me. 80/20 always. For the gluten intolerant, wrap a double in some iceberg lettuce. You'd be surprised how great it is.
I loved how the meat was weighed. The sounds and the closeups did it for me 🤤 I especially liked how sometimes throughout the video you can hear customers ordering their food

They Weigh about 2 Oz's. I used to Work at a Place like this in Chicago and that's the normal Weight.
